Tasting

Nose
The nose reveals beautiful aromatic complexity, where delicate floral notes recalling white flowers and lily of the valley mingle. These fragrances are accompanied by aromas of roasted dried fruits, notably toasted almond and hazelnut, adding an indulgent dimension. The whole is lifted by a flinty mineral touch characteristic of the terroir.

Palate
The palate is rich and powerful, structured by a lovely texture. The attack is broad and generous, supported by an acid backbone that brings balance and elegance to the whole. The finish lingers with remarkable mineral length, a hallmark of this exceptional grand cru.

Food and wine pairings
This Chablis Grand Cru pairs magnificently with fine fish and delicately prepared shellfish such as lobster or spiny lobster. It also pairs beautifully with poultry and white meats, whether roasted or served with sauce. A particularly successful suggestion is to serve it with a fillet of pike-perch in beurre blanc.

Serving and cellaring
Chablis Grand cru "Les Clos" Dom. Long-Depaquit 2022 is best enjoyed at a temperature between 12 and 14°C. This wine has good cellaring potential and can be kept until around 2032, allowing it to evolve harmoniously in the cellar.

A white Grand Cru from Bourgogne of remarkable complexity

The estate
Founded in 1831 in Monthélie by Bernard Bichot, Maison Albert Bichot embodies nearly two centuries of Burgundian winegrowing tradition. Run since 1996 by Albéric Bichot, the sixth generation, this independent family Maison farms around 100 hectares across six estates in Bourgogne, from Chablis to Beaujolais. Combining the roles of négociant-éleveur and producer, Albert Bichot crafts 137 different wines, including prestigious Grands Crus. Its commitment to organic farming, manual harvesting and respectful winemaking places it among the four leading traditional Burgundian négociants.

The vineyard
Chablis Grand Cru "Les Clos" comes from a 1.54-hectare vineyard located on the largest of the Chablis Grands Crus. The vines, with an average age of 37 years, stretch from the foot to the top of the slope, enjoying an optimal south-west exposure. The terroir is based on Kimmeridgian clay-limestone soils composed of very hard, sometimes ochre-colored marls. The distinctive character of this cuvée lies in the blending of two distinct plots: the higher plot, with stony, limestone soils, produces straight, fresh, taut wines, while the mid-slope plot, on deeper and slightly warmer soils, brings breadth, richness and flesh.

Winemaking and aging
Harvesting is carried out by hand with rigorous sorting of the grapes. Pressing is slow and under moderate pressure in order to preserve the integrity of the fruit. Fermentation and aging on fine lees take place over 10 months, with 65% in stainless-steel tanks and 35% in 1- to 5-year-old oak barrels. Chablis Grand cru "Les Clos" Domaine Long-Depaquit 2022 then benefits from a final 6 months of aging in stainless-steel tanks before bottling.

Grape variety
This grand cru is made exclusively from Chardonnay, the emblematic grape variety of Bourgogne and the only one authorized in the Chablis appellation.
