Tasting
Appearance
The wine reveals a luminous pale gold hue, enhanced by delicate silvery reflections.
Nose
The nose opens with an intense minerality evoking gunflint and flint stone. It then unveils a complex bouquet blending citrus aromas, such as pink grapefruit and lemon, with floral notes of elderflower. Subtle hints of white fruits, pineapple and toasted bread further enrich this aromatic palette.
Palate
The attack is remarkably fresh, giving way to a full and unctuous palate. Carried by firm acidity and a crystalline texture, this white wine expresses saline and fruity flavours, underpinned by discreet oak. The finish is long, persistent and delicately smoky.
Food and wine pairings
Ideal as an aperitif, this great white wine from France beautifully complements seafood, warm oysters or shellfish. It also pairs wonderfully with cooked fish, white meats in creamy sauces such as veal blanquette, as well as aged goat cheeses like the famous Crottin de Chavignol.
Serving and cellaring
Endowed with a fine structure and great concentration, Sancerre "La Demoiselle" 2025 can be enjoyed in its youth but also boasts excellent ageing potential, allowing it to evolve harmoniously in the cellar until around 2033.
The expression of an exceptional terroir by Alphonse Mellot
The estate
Located in the heart of the village of Sancerre, in the Loire Valley, the Alphonse Mellot estate embodies a true winemaking dynasty whose historical origins date back to 1513. However, the creation of the modern entity as we know it today dates from 1969. The property is now run by Alphonse Mellot Jr, representing the nineteenth generation, alongside his sister Emmanuelle. Committed to a demanding and environmentally respectful approach to viticulture, the estate stands out for its constant quest for purity and precision, elevating its cuvées among the most prestigious of the appellation.
The vineyard
The cuvée comes from a unique parcel located on the heights of the Sancerre appellation. This rare terroir, composed of flinty clay, slopes steeply eastwards towards the river. Benefiting from a north-easterly exposure that preserves a lovely freshness, these old vines are cultivated according to the principles of organic and biodynamic farming. Yields are strictly controlled and the harvest is carried out manually in small crates in order to preserve the integrity of the berries.
Vinification and ageing
The vinification of Sancerre "La Demoiselle" 2025 is carried out with meticulous care. After rigorous sorting, fermentation takes place in small-capacity wooden vats (15 hectolitres). The wine then benefits from an extended ageing of approximately ten months on fine lees in these same containers, promoting micro-oxygenation and roundness. Ageing concludes with a blending and refining period of at least two to three months before bottling.
