Tasting
Color
The color reveals a lovely, bright and vibrant ruby hue.
Nose
The nose unveils intense, very fresh aromas of ripe small red berries, lifted by delicate spicy notes. Well-integrated oak harmoniously completes this aromatic palette.
Palate
On the palate, this wine offers fine density with a silky texture. The well-integrated tannins coat the palate and lead into a beautiful, fruit-driven finish of very fine length.
Food pairings
This Beaune 1er Cru "Grèves" 2019 pairs perfectly with a grilled rib steak, caramelized pig’s trotters with heirloom vegetables, or a melting veal dish with chanterelles. It also pairs elegantly with game as well as regional cheeses such as Brillat-Savarin, Citeaux, Epoisses or Langres.

The estate
Founded in 1750 in Beaune, Burgundy, the Chanson estate is among the oldest houses still in operation. Owned by the Bollinger group (Bizot family) since 1999, it has been headed by Thierry Berger since 2025. The vineyard totals around 88 ha, including 43 historic hectares in Côte de Beaune, organically certified in 2024, complemented by 45 ha in Côte Chalonnaise acquired in 2023.
The vineyard
The climat "Les Grèves" lies on the slope of Mont Battois, overlooking Beaune. Its name comes from the sandy, gravelly soil characteristic of this terroir. Domaine Chanson owns 2 hectares within this Premier Cru, east-facing and resting on a soil of clay and sand. Half of the plot is made up of massal selection planted between 1955 and 1962, and the other half of clones planted in 1990.
The vintage
The 2019 vintage stands out as a legendary year in Burgundy, marked by exceptional grape concentration. The mild weather in May and early June encouraged vigorous vine growth. Summer saw several heatwave episodes, but the vines withstood water stress particularly well thanks to the clay soils. Harvest began on September 6 in excellent conditions, with impeccable fruit health.
Vinification and aging
After a two-week whole-cluster fermentation, the Beaune 1er Cru "Grèves" 2019 is aged in oak barrels in the historic cellars of the Bastion de l'Oratoire, dating back to the 15th century. Aging lasts between 14 and 18 months, with a moderate proportion of new barrels. Before bottling, the wines are not filtered in order to preserve their structure with as little handling as possible.
