Tasting Notes
Colour
The visual appearance reveals an elegant pale yellow hue with bright golden highlights. Crystal clear, it is nuanced with subtle silvery touches.
Nose
Fine, subtle and remarkably elegant, the aromatic bouquet opens with scents of white peach and yellow-fleshed fruits. It then reveals fine complexity through citrus notes reminiscent of lemon zest, floral touches and pronounced minerality, rounded out by hints of almond and a delicate touch of honey.
Palate
The attack on the palate offers remarkable freshness and elegance. Light to medium-bodied, it unfolds flavours of citrus and stone fruits such as nectarine, underpinned by a mineral backbone and subtle honeyed notes. The crisp acidity brings perfect balance to the whole, extending into an exceptionally long finish.
Food and wine pairing
This white wine pairs wonderfully with tender meats such as veal chop, as well as with langoustines and refined seafood. It is an ideal accompaniment to Mediterranean cuisine, particularly grilled fish with lemon and olive oil.
Service and storage
For optimal tasting, this wine should be served between 10 and 12°C.
The Expression of a High-Altitude Terroir in Côtes de Provence at Château Saint-Maur
The estate
Built in the 19th century, Château Saint-Maur was awarded the prestigious Cru Classé status in 1955. Acquired in 2011 by Roger Zannier, the estate has undergone a spectacular modernisation. Under the direction of Marc Monrose, the property distinguishes itself through its pursuit of excellence and deep respect for the environment. Located in Cogolin, this vineyard combines historic heritage with state-of-the-art technical facilities to reveal the full richness of its terroir.
The vineyard
Rising to an altitude of 449 metres, the Clos de Capelune plot is the highest vineyard in the Côtes de Provence appellation. Spread across the heights, this terroir benefits from a south-eastern exposure and a strong maritime influence. The vines thrive on clay-limestone soils rich in schist and quartz. The estate practises sustainable viticulture here, encouraging biodiversity.
Winemaking and aging
The making of this wine relies on state-of-the-art gravity-flow facilities to preserve the integrity of the grapes. After harvest, the grapes undergo a cold maceration at low temperature. The juice is then separated from the solid matter before undergoing fermentation in stainless steel tanks. The use of these vessels allows for rigorous thermal control, thus preserving all the freshness and aromatic complexity of the wine.
