Tasting
Appearance

Nose
The bouquet reveals elegant aromas of small red berries and spices. Notes of wild red and black fruits mingle with freshly ground pepper, complemented by nuances of game and bouquet garni.
Palate
The palate is fleshy and highly complex, with ripe, concentrated fruit at its core. The tannic structure is pronounced, supporting flavors of wildness, spice, and black olives. The whole offers intense concentration and a lingering finish.
Food and wine pairings
This Saint-Joseph pairs perfectly with game dishes and richly prepared red meats. Its robust structure and assertive tannins also stand up well to dishes with complex sauces and bold seasonings.

The estate
Founded at the end of the 19th century by Antonin and Jean-Auguste Coursodon in the Rhône Valley, Domaine Coursodon is a historic benchmark of the Saint-Joseph appellation. Based in Mauves, the cradle of this northern appellation, the estate is now run by Jérôme Coursodon, the fifth generation of the family and named Winemaker of the Year 2022 by the Guide Hachette. The emblematic cuvées reflect an exceptional command of granitic terroirs and expertise passed down for more than one hundred and fifty years.
The vineyard
The Saint-Joseph vineyard from which Le Paradis Saint Pierre originates is defined by a very granitic terroir with shallow soils. The estate’s oldest vines are trained as bush vines on steep, south-facing slopes. Massal selections and entirely manual work, with no possibility of mechanization, reflect exacting viticulture. Treatments are applied with a backpack sprayer, and green harvesting is carried out at veraison to limit yields to 30 hectoliters per hectare.
Winemaking and aging
The Le Paradis Saint Pierre 2022 harvest is carried out by hand with an initial selective sorting. The grapes are transported in 40-kilogram crates, then sorted on a table upon arrival. Half of the crop is destemmed. Maceration and fermentation take place in open vats for 25 days with two to three punch-downs per day, aiming for maximum extraction of tannins and color. Aging is carried out for 12 months in barrels and demi-muids, followed by 6 months in a horizontal ovoid cement tank.
