Tasting

Nose
The aromatic bouquet reveals great intensity and beautiful complexity. It expresses deep aromas of red and black fruits, enhanced by spicy notes. The whole is harmoniously underscored by subtle, perfectly integrated oak.

Palate
The attack is seductive and rounded, revealing a balanced and elegant structure. The palate is supported by fine, tightly knit tannins, offering remarkable freshness. The tasting concludes with a persistent and complex finish, reflecting the assertive character of this wine.

Food and wine pairings
This red wine pairs beautifully with small game, such as quail or venison served with a refined sauce. It will also enhance red meats or a veal chop served with mushrooms, particularly chanterelles. For cheese, opt for blue-veined varieties.

Serving and cellaring
To fully appreciate II du Château Saint-Pierre 2025, it is recommended to serve it at a temperature between 60 and 64°F (16–18°C). Light decanting is advisable in its youth to reveal its full aromatic expression, while its structure promises harmonious aging over the years.

The elegance and complexity of a second wine from Pomerol

The estate
Located on the prestigious Pomerol plateau, in the Bordeaux region, the Château Saint-Pierre is an estate whose winemaking roots date back to the 17th century. The Pradel de Lavaux family acquired the property in 1920. Today, Axel Pradel de Lavaux leads the estate and represents the ninth generation of this winemaking lineage. Since 2014, he has modernized practices to elevate this label among the elite of the appellation, favoring a tailor-made approach that reveals the full elegance and complexity of this exceptional terroir.

The vineyard
The vines extend at the heart of the Pomerol appellation. Averaging 20 years of age, the vineyard benefits from a planting density ranging from 6,000 to 7,500 vines per hectare. It thrives on a sandy-gravel terroir particularly rich in iron deposits, typical of the region. Vineyard management is traditional and partially grass-covered, including meticulous work such as debudding and thinning. Rigorous plot selection is applied, followed by manual harvesting carried out on September 10 and 11.

II du Château Saint-Pierre is the estate’s Second Wine.

The vintage
The year 2025 was marked by contrasting climatic conditions, beginning with a rainy winter and a wet spring that helped build up good water reserves. The end of summer was then characterized by exceptional sunshine and heatwaves. Thanks to well-judged agronomic choices and perfectly adapted vineyard management, water stress was kept under control. These efforts helped preserve the balance and freshness of the berries through to harvest.

Winemaking and aging
Following meticulous sorting, the grapes begin fermentation in temperature-controlled stainless steel and concrete vats. Maceration lasts two to three weeks to extract the material with precision. After run-off, the wine is immediately transferred into barrels. The aging of II du Château Saint-Pierre 2025 then continues for 15 months in oak barrels, with 20% new oak and 80% one-year-old barrels, ensuring subtle integration of the wood. Alcohol: 13.5%.
