Tasting

Nose
The nose expresses itself with intensity in a floral register dominated by white flowers.

Palate
The palate reveals a very pronounced floral character, all white flowers. The mineral expression asserts itself powerfully, giving the wine remarkable purity. The mouthwatering finish, characteristic of great wines, pleasantly extends the tasting.

Serving and cellaring

It is recommended to serve this Chablis 1er cru "Côte de Léchet" 2023 at a temperature between 10 and 12°C to fully appreciate its aromatic finesse and minerality.

A Chablis Premier Cru with exceptional minerality

The estate

Established in 1955 in Milly in Burgundy, the Domaine Jean Dauvissat Père et Fils covers 22 hectares spread across 53 parcels in seven villages of the Chablis area. Fabien Dauvissat, the founder’s grandson, now runs the estate with his father Philippe. Since 2009, Fabien has converted the estate to organic farming. This mosaic of terroirs on both banks of the Serein makes it possible to craft cuvées expressing the typical minerality of Burgundy’s Kimmeridgian limestone.

The vineyard

The Côte de Léchet climat overlooks the village of Milly. With an impressive slope in full sun, this terroir stands out for its very poor, extremely stony soil. These demanding conditions naturally result in low yields and give the wines remarkable minerality, the distinctive signature of this Premier Cru of Chablis. Averaging 35 years old, the vineyard covers 2 hectares spread across 4 parcels.

Vintage

A mild winter precedes a spring marked by frosts with limited impact on the vineyard. Rainfall from April to June gives way to drought through July. Despite these unstable conditions, the vintage is both abundant and high-quality.

Winemaking and aging

The Chablis 1er cru "Côte de Léchet" 2023 is vinified at low temperature, thus preserving the fruit’s aromatic purity. Pressing lasts 12 to 24 hours. The wine then benefits from aging of 18 to 24 months, allowing the development of its complexity and structure.

This white wine from Burgundy is 100% chardonnay.
