Tasting

Appearance
This wine reveals a beautiful ruby hue, both vibrant and perfectly clear.

Nose
The aromatic bouquet shows great restraint, releasing delicate scents of fresh fruit harmoniously interwoven with hints of fern.

Palate
The attack proves generous and full of strength. The palate unfolds savoury notes of morello cherry, accompanied by nuances of moss and undergrowth. The whole stretches into a long finish, carried by a beautifully balanced tannic framework.

Food and wine pairings
This cuvée will wonderfully accompany characterful meats such as a beef mironton, venison with cranberries, or rabbit cooked with wild mushrooms. It will also pair ideally with a platter of aged cheeses.

Serving and cellaring
To fully appreciate this Vosne-Romanée Village 2007, it is recommended to serve it at a temperature between 14 and 15 °C. As for its ageing potential, this wine will reach its peak and can be enjoyed until around 2014.

The elegance of a great Burgundy Pinot Noir crafted by Louis Latour

The estate
Officially founded in 1797, the Maison Louis Latour is a true institution in Burgundy. Based in Aloxe-Corton, this historic estate watches over a 48-hectare vineyard, including 27 hectares classified as Grand Cru, representing the largest surface area of this rank in the region. Now led by Florent Latour, the family perpetuates an ancestral expertise combining sustainable viticulture and in-house cooperage mastery. This internationally renowned brand stands out for its family-owned independence and its deep commitment to respecting Burgundy's terroirs.

The vineyard
The vines giving rise to this Vosne-Romanée flourish in the heart of the prestigious Côte de Nuits. Averaging around thirty years old, they draw their complexity from a typical subsoil composed of ferruginous clay. To ensure optimal quality, yields are kept under control at around 40 hectolitres per hectare and the grapes are harvested exclusively by hand.

The vintage
The year began with an early development of the vine in spring. The summer season was then marked by three months of cool, damp weather, characterised by regular light rainfall. These demanding climatic conditions led to high disease pressure, requiring an early harvest for the red grapes in order to preserve their integrity.

Vinification and ageing
The making of this Vosne-Romanée Village 2007 begins with a traditional fermentation carried out in open vats, followed by a full malolactic fermentation. The wine then benefits from meticulous ageing lasting 10 to 12 months. This rest takes place in medium-toast French oak barrels, 20% of which are new, all produced within the estate's own cooperage.

Grape variety
This cuvée is made exclusively from 100% Pinot Noir.
