A biodynamic Sancerre of remarkable mineral finesse

The Estate

Matthias Planchon represents the new generation of Sancerre winegrowers. After honing his craft at Alphonse Mellot, he set up in 2017 and developed a 5-hectare estate of deliberately human-scale proportions. Farmed biodynamically, his vineyard is Demeter- and Biodyvin-certified and makes the most of flint and limestone soils to produce primarily Sauvignon Blanc. His Les Herses and Le Paradis cuvées stand out for their long aging, which highlights the expression of the terroir. His modern approach makes him one of the rising talents of the appellation.

The Vineyard

Le Paradis is a Sancerre wine from a 0.90-hectare south-facing parcel on a clay-limestone terroir. The stony, limestone-rich topsoil gives way to a high clay content at depth. The vines, averaging 55 years old, are farmed according to organic and biodynamic principles in harmony with solar and lunar cycles and are Demeter- and Biodyvin-certified.

Winemaking and Aging

The grapes for Paradis 2022 are hand-harvested, then pressed using sequential pneumatic pressing. Static settling takes place below 10 °C for 48 to 72 hours. Fermentation occurs in 600-liter demi-muids and 10-hectoliter oak vats. The wine then rests on fine lees for a full year before being racked into stainless-steel tanks for a further year of aging. Bottling is carried out at the estate according to the lunar calendar.
