Tasting

Appearance
The wine reveals a pale colour, characteristic of the great white wines for ageing from its appellation.

Nose
The aromatic bouquet displays remarkable purity, blending stone fruit and citrus aromas with subtle herbaceous notes and a distinguished minerality.

Palate
On tasting, this wine stands out for its fruit-driven profile and its great complexity. It offers a superb tension combining freshness and substance, enhanced by a beautiful salinity and a finish of remarkable length.

Food and wine pairing
This cuvée pairs wonderfully with seafood. It will be the ideal companion to raw fish dishes such as ceviche, or pan-seared wild sea bass.

Serving and cellaring
To fully appreciate this 2025 vintage, it is recommended to serve it at a temperature of 10°C. Endowed with excellent potential, this wine can be cellared until around 2045.

The pure expression of a great Sancerre terroir by Pascal Jolivet

The estate
Founded in 1987, the Pascal Jolivet House is a key figure in the Loire Valley. Still led by its founder and current owner, the company has grown to encompass 120 hectares of vines today. The estate stands out for its philosophy of respect for nature, favouring gentle working methods and natural vinifications to allow the authenticity of the terroirs to express itself. This signature approach makes it possible to produce cuvées of great precision, recognised for their consistent quality and strong identity.

The vineyard
This wine comes from a plot selection within a famous lieu-dit located in the commune of Bué, within the Sancerre appellation. The estate cultivates 1.83 hectares there, within a historic 26-hectare site. The old vines, averaging 40 years of age, thrive on slopes enjoying an optimal southern exposure. They draw all their typicity from a predominantly limestone soil, encouraging concentration and the mineral expression of the grapes.

Vinification and ageing
The making of the "Le Chêne Marchand" 2025 cuvée begins with manual harvesting followed by rigorous sorting of the berries upon arrival. To preserve the quality of the fruit, all handling is done by gravity. After light pressing, only the free-run juice and the heart of the press are retained. Fermentation takes place naturally in temperature-controlled stainless steel tanks. Finally, the wine benefits from 8 months of ageing on fine lees, giving it texture and roundness.

Grape variety
This cuvée is made from 100% Sauvignon Blanc.
