A Loire white wine combining richness and freshness
The estate
A former representative of the Champagne House Pommery, Pascal Jolivet founded his estate in Sancerre in 1987. Since his first vintage in 1991, he has continuously expanded his vineyard, which today covers 95 hectares, stretching from Pouilly-Fumé to Touraine, taking in Sancerre and Pouilly-sur-Loire along the way.
The vineyard
The Sauvage cuvée is a Sancerre wine produced from old vines planted in the communes of Champtin and Crézancy, growing on clay-limestone soils.
Vinification and aging
The grapes, harvested by hand, are pressed in whole bunches. After a light cold settling, vinification takes place in a completely natural way in temperature-controlled stainless-steel vats. Aging on fine lees for this white Sancerre wine lasts nine months, bringing complexity and depth to the wine.
