Tasting

Nose
The aromatic bouquet reveals great delicacy, unveiling scents of white stone fruits and green apple, accompanied by citrus notes. A subtle smoky touch and chalky minerality perfectly complete this elegant nose.

Palate
On the palate, this dry and feminine wine offers a perfect balance between richness and tension. The attack is lively, giving way to an ample and well-coated mid-palate. The finish lingers at length on persistent salinity and a remarkably pure mineral framework.

Food and wine pairings
This cuvée is ideally enjoyed as early as the aperitif. It pairs wonderfully with seafood platters, shellfish, as well as raw fish such as sushi or ceviche. It also enhances delicate cooked fish and goat cheeses.

Service and cellaring
To fully appreciate this Sancerre 2024 by Pascal Jolivet, it is recommended to serve it at a temperature of 10°C. Endowed with fine ageing potential, it can be kept in the cellar to be enjoyed until around 2034.

The mineral elegance of a great Sancerre crafted by Pascal Jolivet

The estate
Founded in 1987, the Pascal Jolivet House quickly established itself as an essential reference in the Loire Valley. Still managed by its founder and current owner, Pascal Jolivet, the estate cultivates a minimalist and natural approach to winemaking. The property spans 120 hectares spread between Sancerre and Pouilly-Fumé, complemented by 60 hectares in Touraine. Combining the soul of a family estate with the strength of an internationally recognised brand, this House celebrates the pure expression of the Loire terroirs through wines of great precision.

The vineyard
The grapes come from a mosaic of exceptional terroirs located within the Sancerre appellation, notably in the villages of Bué, Verdigny, Saint-Satur and Sainte-Gemme. The soil is composed of 50% limestone, providing vivacity, 30% clay-limestone for structure, and 20% flint, ensuring a unique mineral tension. The estate favours sustainable viticulture, drawing inspiration from organic and biodynamic methods to preserve the vitality of the vines and the ecosystem.

Winemaking and ageing
As soon as they arrive at the winery, the grape clusters intended for this Sancerre 2024 are meticulously sorted. Winemaking is carried out by gravity in order to respect the integrity of the fruit. After a very gentle pressing, only the free-run juices and the heart of the press are retained. Each batch is vinified separately according to its origin in temperature-controlled stainless steel tanks, using exclusively indigenous yeasts. The wine then benefits from ageing on fine lees for several months, granting it its ample texture and complexity.

This cuvée is crafted exclusively from 100% Sauvignon Blanc.
