Tasting
Nose
Deep and serious, the bouquet reveals elegant notes of wet stone and struck flint. It then opens onto mouthwatering aromas of lemon curd, peach and pear, subtly complemented by hints of lemon blossom and freshly baked bread.
Palate
The attack is marked by superb acidic tension that guides the tasting. The body is at once dense, fleshy and layered, without ever feeling heavy. The mid-palate unfolds a deep core of fruit in a lemony, mineral register. The finish, pure and full of energy, lingers on a delicate note of sweet spices.
Food and Wine Pairing
This white wine pairs wonderfully with delicate seafood dishes, such as scallop tartare, salmon tartare enlivened with pink peppercorns, or hake served with a beurre blanc sauce. It will also elevate lightly aged soft cheeses such as a young Comté or a farmhouse Saint-Nectaire.
The Purity and Tension of a Great Verget White Wine from Mâcon-Vergisson
The Estate
Founded in 1990 in Sologny, Burgundy, the négociant house Verget is the result of the vision of Jean-Marie Guffens and Maine Heynen. Pioneers in the region, they established a unique model based on the exclusive purchase of carefully selected grapes. Today, the presidency is held by JMG Holding, while Julien Desplans has served as managing director and cellar master since 2023. A true benchmark of haute couture winemaking, Verget stands out for its ability to reveal the full complexity of the Mâconnais terroirs through vinifications of remarkable precision.
The Vineyard
The Mâcon-Vergisson cuvée comes from a single plot located on the upper part of the spectacular Roche de Vergisson, at nearly 400 metres above sea level. Unlike the south-facing slope, this vineyard enjoys a due north and north-east exposure, which gives it a cooler climate. The vines grow in very thin, highly calcareous soils, which naturally limit yields while promoting slow ripening of the grapes. This singular terroir imparts exceptional freshness and minerality to this Burgundy wine.
Winemaking and Ageing
True to the house philosophy, the production of the Mâcon-Vergisson "Sur la Roche" 2025 begins with harvesting at optimal ripeness, followed by slow whole-bunch pressing. The alcoholic fermentations take place slowly in barrels. The wine is then aged entirely in oak barrels, 25% of which are new, for at least six months. Lees stirring is kept to a minimum in order to preserve all the precision, tension and aromatic purity of this cuvée.
