Tasting

Appearance
The glass reveals a brilliant yellow colour, lit by bright highlights.

Nose
The aromatic bouquet is complex and intensely fruity. It gives off alluring notes of citrus and exotic fruits such as mango and pineapple, harmoniously intertwined with scents of yellow flowers and subtle mineral touches.

Palate
The attack is ample and smooth, delivering a silky texture and beautiful volume. The palate charms with its richness and precision, supported by a lively acidity and a well-controlled minerality. The tasting unfolds into a long, elegant finish, enhanced by noble bitter notes.

Food and Wine Pairing

This gastronomic wine pairs wonderfully with oily fish, a seafood platter, a creamy risotto or even full-flavoured cheeses. It will also go very well with white meats served with a creamy mushroom sauce.

Serving and Ageing

For optimal enjoyment, we recommend serving this Saint-Véran Village "Terroirs de Davayé" 2025 at a temperature of between 12 and 13 °C. This wine can be enjoyed in its youth but will continue to develop favourably until around 2033.

The Richness and Mineral Precision of a White Saint-Véran Wine

The Estate

Founded in 1990 in Sologny, in the heart of Burgundy, the négociant house Verget is the creation of Jean-Marie Guffens and his wife Maine. Still led today by Jean-Marie Guffens, alongside oenologist Julien Desplans, this structure stands out for its "haute couture" approach. Unlike traditional négociants, Verget buys only grapes and centralises its vinifications in order to express the nuances of Burgundian terroirs with immense precision. Renowned for its exacting standards, the house has established itself as an essential reference, particularly in the Mâconnais.

The Vineyard

This white Saint-Véran wine comes from a meticulous selection of plots located around the village of Davayé. The terroir is characterised by great topographical and pedological diversity. The blend draws its complexity from limestone hillsides with varied exposures: very sunny, stony south-facing sites, dark clay soils resting on limestone bedrock, and north-facing slopes bringing more freshness and tension to the berries.

Vinification and Ageing

The house's philosophy rests on rigorous control of pressing in crafting this Saint-Véran Village "Terroirs de Davayé" 2025. The rich, powerful press juices are skilfully blended with the finer, more acidulous free-run juices to achieve a perfect balance. Fermentation and ageing take place together in oak barrels, with a moderate proportion of new oak, and in tanks. A few measured bâtonnages are carried out during ageing on the lees to add complexity and a slight, controlled reduction, without ever masking the brilliance of the fruit.
