Tasting
Color

Palate
On the palate, the wine is full and rounded, offering a generous texture while retaining fine tension. The fresh, saline finish brings balance and length to the whole, reflecting the mineral character typical of the appellation.

A Chablis Premier Cru combining richness and minerality
The estate
Founded in 1959, Domaine William Fèvre now stands as one of the leading owners in Chablis, with around 78 hectares spread across more than 90 plots. Since 1998, Didier Séguier has managed the estate with a philosophy centered on expressing the terroir and respecting the environment. In January 2024, the estate was acquired by the Domaines Barons de Rothschild Lafite, marking a new chapter in its history. The estate stands out for its biodynamic practices and its Haute Valeur Environnementale (Level 3) certification, obtained as early as 2014.
The vineyard
The Chablis Premier Cru Fourchaume comes from vines located on the right bank of the Serein. The terroir is characterized by Kimmeridgian soils, a unique geological formation composed of fossil-rich marls and limestones that gives the wines their distinctive minerality. The favorable exposure of the Fourchaume Climat allows for optimal ripening of the grapes.
The vintage
The year 2020 was marked by warm, early conditions. The growing cycle unfolded with a notable head start, encouraging full grape ripeness. These conditions made it possible to produce wines that are rich and concentrated, while preserving the tension and freshness essential to the balance of great Chablis.
Winemaking and aging
The winemaking of the Chablis Premier Cru "Fourchaume" 2020 favors moderate use of oak barrels in order to preserve the wine’s freshness and minerality. Aging lasts between 13 and 14 months, with around 40 to 50% of the wine aged in used oak barrels for five to six months, while the rest is kept in stainless-steel tanks. This approach respects the expression of this Burgundian terroir while bringing subtle complexity.
