The estate

The Domaine William Fèvre, founded in 1959, is now regarded as an essential benchmark of the Chablis appellation. With around 70 hectares of vines spread across all the appellation’s classifications, including 15.2 hectares of Grand Cru, the estate is the largest private domaine in Chablis. Since 1998, Didier Séguier has run the estate with a philosophy focused on respect for the environment and the authentic expression of terroir. In January 2024, the domaine joined the Domaines Barons de Rothschild Lafite group, marking a new chapter in its history while preserving its identity and its team.

The vineyard

The vineyard of Chablis rests on the famous Kimmeridgian soil, a geological formation dating from the Upper Jurassic made up of marine limestone rich in fossils of small oysters. This unique terroir gives the wines their distinctive minerality and saline freshness. Located in northern Burgundy, the vineyard benefits from a cool continental climate that preserves chardonnay’s natural acidity and allows the terroir to be expressed with purity.

The vintage

The 2019 vintage is recognized as exceptional throughout Burgundy. In Chablis, climatic conditions made it possible to achieve an ideal balance between grape ripeness and the preservation of natural acidity. The year brought enough warmth to ensure fine phenolic ripeness without excessive sugar, allowing the wines to express all the purity and tension that are characteristic of the appellation.

Winemaking and aging

Winemaking for the William Fèvre Chablis 2019 follows a minimal-intervention approach designed to favor the expression of terroir. The grapes are harvested by hand, then vinified partly in stainless-steel tanks and partly in older French oak barrels. Aging continues for several months on fine lees, bringing complexity and texture while preserving the freshness and minerality that define the wine’s identity.
