Tasting
Appearance
The wine displays a pale to medium gold hue, with brilliant clarity and moderate intensity.
Nose
Precise and complex, the nose releases aromas of citrus fruits (lemon zest, grapefruit) and white flowers, underpinned by a mineral framework. Subtle secondary notes of honeysuckle, cream, buttered bread and candied lemon also reveal themselves throughout the tasting.
Palate
Ample and rich, the palate offers a beautiful concentration of yellow fruits evolving towards notes of stone fruits and white flowers. The generous texture is perfectly balanced by a vibrant mineral tension, leading to a long, saline finish of great precision.
Food and wine pairings
This white wine pairs wonderfully with grilled fish such as sea bass or sea bream baked in parchment, as well as with creamy seafood dishes such as lobster with beurre blanc. It also perfectly accompanies roast poultry and fresh or aged goat cheeses.
Serving and cellaring
To fully appreciate the Chassagne-Montrachet Village "En Pimont" 2023, it is recommended to serve it at a temperature between 10 and 12°C. This wine can be enjoyed now, but its mineral structure allows it to evolve favourably in the cellar until around 2035.

The estate
Founded in the late 2000s by Francine Picard, who runs the estate today, Au Pied du Mont Chauve is an essential reference in Burgundy. Born from a winegrowing family whose history began in 1951, the estate cultivates a "haute couture" approach. The vineyard, covering 20 to 30 hectares, extends across the prestigious terroirs of the Côte de Beaune. Committed to an environmentally respectful approach, the estate applies the principles of biodynamics to produce authentic wines that reflect the purity and minerality of their exceptional terroirs.
The vineyard
This wine comes from the "En Pimont" Climat, a plot of around 3 hectares located at an altitude of 250 metres on the north-western slopes of Chassagne-Montrachet. Planted in the 1970s, the vines thrive on shallow, stony brown limestone soils. The vineyard is managed according to the principles of biodynamics, with natural grass cover, mechanical soil work and single Guyot pruning, ensuring a perfect balance between the vigour of the plant and the ripeness of the fruit.
The vintage
The 2023 vintage stands out for its mild weather conditions, offering an exceptional flowering and abundant rainfall. The warm summer season favoured a rapid and generous ripening of the berries, leading to early harvests from mid-September. This vintage offers larger volumes than in previous years, while preserving lovely freshness and vibrant acidity.
Vinification and ageing
The harvest of the Chassagne-Montrachet Village "En Pimont" 2023 is carried out by hand in small crates, followed by rigorous sorting. The grapes are pressed directly without crushing or destemming. After overnight settling in stainless steel tanks, fermentation begins naturally with indigenous yeasts in oak barrels of various sizes. Ageing continues on the lees for 18 months, of which 12 months in wood with 15% new oak (30% in foudres, 30% in 350L barrels of second use), 25% in Burgundy barrels of second use and older, and 6 months in stainless steel tanks.
