Roasted earth and smoke surround subtle cherry on the nose of this wine. That roasted notion, with a slight edge of bitterness, wraps itself around soft, ripe but fresh dark cherry on the firm palate, creating an impression of smokiness. Tannins brush gently and provide a fitting frame.

Tasting

Appearance

The wine reveals a deep ruby hue, highlighting a beautiful concentration and a fleshy texture.

Nose

The aromatic bouquet opens with delicate floral notes reminiscent of rose petals, harmoniously complemented by hints of sandalwood, white pepper and kirsch.

Palate

Energetic and juicy, the palate offers a refreshing acidity and a remarkably persistent finish. The tannins, of great finesse, structure the whole with elegance.

Food and wine pairings

This wine pairs wonderfully with roasted or grilled cuts of beef, as well as with game in sauce. It also enhances characterful washed-rind cheeses, such as Époisses, or finely aged charcuterie of the highest quality.

Serving and cellaring

For an optimal tasting experience, it is recommended to serve the Corton Grand Cru "Clos des Fiètres" 2017 at a temperature between 14 and 16°C, after uncorking it about thirty minutes beforehand. This wine can be enjoyed now, but has the balance needed to evolve in the cellar until around 2035.

The precision and elegance of a Burgundy Grand Cru

The estate

Founded in 2007 by Francine Picard, who is still its current owner, the Au Pied du Mont Chauve estate extends over a 30-hectare vineyard in the heart of Burgundy. Spread across prestigious villages, the property stands out for its demanding viticultural approach, described as haute couture. Guided by the principles of biodynamics, the estate favours natural, low-intervention winemaking in order to fully express the purity and singularity of each terroir.

The vineyard

Located on the isolated hill of Corton, the Clos des Fiètres plot benefits from a unique microclimate and a privileged south-east to south-west exposure. Enclosed by historic walls, this small terroir of around 0.36 hectares lies on soils composed of red earth, gravel, stones and potassium-rich marls. The vines, some of which are over a hundred years old, are cultivated according to biodynamic principles, with mechanical tilling of the soil and natural grass cover that promote the vitality of the ecosystem.

The vintage

The year 2017 began with a mild winter, followed by an unstable spring marked by frost episodes in late April, which nevertheless relatively spared the region. The summer season then proved warm and bright, offering ideal conditions for the development of the berries. The harvest took place in September under very favourable weather, allowing fruit of great freshness and optimal ripeness to be picked.

Winemaking and ageing

For the production of the Corton Grand Cru "Clos des Fiètres" 2017, the grapes were entirely destemmed before undergoing vinification in temperature-controlled stainless steel tanks. Extraction is kept light and measured in order to preserve the delicacy of the aromas. The wine then benefits from a meticulous 15-month ageing process, including 12 months in oak (30% new barrels).
