Tasting

Appearance
Beautifully intense, the ruby red colour shines with brilliant highlights.

Nose
The aromatic bouquet reveals a lovely complexity, blending crisp red berry aromas such as cherry and raspberry with subtle spicy notes and a delicate oakiness.

Palate
The attack is clean and elegant. The palate captivates with its silky tannins and fruity structure, supported by a beautiful mineral freshness typical of its terroir, leading to a persistent and harmonious finish.

Food and wine pairings

This red wine from Burgundy will pair perfectly with roasted meats, poultry in sauce or a selection of aged cheeses.

Serving and ageing

For optimal tasting, it is recommended to serve this wine between 15 and 17°C. Endowed with excellent ageing potential, it can patiently rest in the cellar until around 2033.

The elegance and precision of a great red wine from Burgundy

The estate

Daughter of one of the greatest winegrowing families in Burgundy, Francine Picard took over the estate historically run by her father in the late 1990s. Domaine Au Pied du Mont Chauve extends across the communes of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, at the heart of Burgundy's finest climats and terroirs.

Striving for synergy between the land and the wines, Francine Picard cultivates her plots in accordance with the principles of biodynamics and devotes herself passionately and with the utmost attention to producing wines that reflect the identity of their terroir. Sourced from a 110-hectare vineyard farmed using "agro-ecology", the Chardonnay and Pinot Noir of Domaine Au Pied du Mont Chauve are renowned for their quality, precision and elegance. Since May 2019, Antoine Lepetit de la Bigne, a specialist in biodynamic viticulture, has joined the Domaine's team as Technical Director.

The vineyard

The Pitangerets climat, located within the Saint-Aubin appellation, lies at the foot of the slope, nestled between the Chassagne quarry and the Montrachet hill. The terroir is characterised by a soil rich in limestone with a significant amount of limestone scree resulting from the erosion of the bedrock. The Pinot Noir vines were planted in the mid-1980s. The management of this 0.35-hectare vineyard follows the principles of biodynamics with the use of preparations 500 and 500P, as well as decoctions of horsetail, nettle, willow and silica. The soil benefits from natural grass cover and mechanical work.

Winemaking and ageing

The grapes for the Saint-Aubin 1er cru "Pitangerets" are hand-harvested into small crates and then sorted on a sorting table. After 100% destemming, the whole berries are transferred to the vats via stainless steel trolleys to avoid any crushing or pumping. Vinification follows the traditional Burgundian method in open, temperature-controlled vats. Ageing takes place over fifteen months in Burgundy barrels, including 25% new oak, 15% one-wine Burgundy barrels and 60% two-wine and older Burgundy barrels.
