Based on the 2019 vintage and incorporating reserve wines from 2018, 2017 and 2016, the latest release of Ayala’s NV Brut Nature—disgorged in August 2023 without dosage—reveals high-toned aromatics of freshly sliced golden apples just beginning to brown and acacia blossom, mingling with lemon zest and a hint of marzipan. On the palate, it is medium-bodied, lean and incisive, yet it lacks the requisite concentration to fully support its brisk acid spine, culminating in an uncompromisingly bone-dry finish. A pronounced apple-skin aroma intrudes upon the composition, detracting from the wine’s overall harmony. The blend is composed of 55% Chardonnay, 30% Pinot Noir and 15% Pinot Meunier, vinified entirely in steel.

Tightly wound, mineral-driven citrus fruit flavors gain weight with air and turn to deeper nectarine and pear. Unfolds slowly on the finish, lingering with excellent tenacity and resonant mineral and floral notes.

A bright straw color, it’s a touch more forward yet remains elegant on the nose, with more notes of fresh peach, raw hazelnut or almond, and citrus zest. It has lovely salinity and a gastronomic feel and will offer good longevity over the next 10 years or more.

Description

The Brut Nature of the Champagne House Ayala is a delicious blend of typical varietals from the Champagne Region. It is 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier. This wine is identifiable by its natural balance - it does not benefit from any dosage during disgorgement- and expresses its purity. After a 2 to 3 years ageing process in a cellar, this champagne releases minerality, finesse, vinosity and complexity. It has a beautiful aromatic intensity on the nose and expresses citrussy and salty notes which bring a great freshness to the wine. This champagne is a mix of restrained power and elegance, which is very characteristic of the Chardonnay. This wine offers a balance between vibrancy and purity.
