Devaux : Ultra D Extra Brut

The NV Extra Brut Cuvée Ultra D blends 55% Pinot Noir and 45% Chardonnay, with a good third of reserve wines and a lower dosage. Lovely wet stone and lemon greet the nose, followed by fresh blond baguette crust. The palate is lively, fresh and vivid, fizzing with lemony, almost chalky verve on a slender yet elegant body. A bone-dry Champagne, with a slight preponderance of Pinot Noir in the blend, this succeeds because of the richness of its fruit and the tight texture. The bottling is young, still shockingly fresh and crisp, so wait to drink until 2021.
