Tasting

Appearance

The wine displays a yellow hue with subtle green highlights, suggesting vibrancy and motion. The effervescence stands out through fine, lively, silky bubbles.

Nose

The bouquet opens with a striking sensation of petrichor, combining warmth and freshness, along with notes of heady jasmine.

Palate

On the palate, the champagne charms with its generous breadth and elegant finesse. The creamy, exotic texture reveals great richness. A striking duality emerges between bitterness and acidity, softness and tension, roundness and sharpness. Complex touches of candied zest, with vegetal and fruity nuances, come through. The mineral, sparkling finish lingers at length with notes of fruit, citrus and toast.

Food and wine pairings

This exceptional champagne enhances a rack of lamb with maquis herbs. It pairs particularly well with refined seafood such as caviar, king crab and langoustines.

Serving and cellaring

Dom Pérignon Vintage 2017 requires aeration to dispel reduction before tasting. It is recommended to serve it at a temperature between 8 and 10°C.

The estate

Named after the famous monk Pierre Pérignon, procurator of the Abbey of Hautvillers in 1668, Dom Pérignon champagne symbolizes a rich heritage and an unceasing pursuit of excellence. This visionary monk is often associated with the discovery of the Champagne method, a crucial milestone in the history of champagne. Dom Pérignon’s commitment to quality and innovation lives on, embodied by its current Chef de Caves, Vincent Chaperon, who took up the mantle in 2019. The House philosophy, centered on expressing vintages, reflects an ambition to create the « best wine in the world », an objective upheld since Dom Pierre Pérignon was appointed cellarer of the Abbey of Hautvillers.

The wine

Created from the 1921 vintage at the initiative of Robert-Jean de Vogüé, this vintage cuvée pays tribute to the Benedictine monk Dom Pierre Pérignon, procurator of the Abbey of Hautvillers from 1668, a pioneer in the art of blending and secondary fermentation in bottle. Released only in exceptional vintages, Dom Pérignon Vintage embodies Champagne excellence through its rigorous selection and legendary historical heritage.

The vintage

The year 2017 was marked by historic warmth and episodes of extreme weather. Spring brought frosts, followed by a hot, dry summer. Late-August rains created botrytis pressure. These contrasting conditions gave rise to Chardonnays of great ripeness, while the scarce Pinot Noirs displayed a remarkable balance between maturity and freshness. This vintage represents a radical gesture bringing to a close thirty years of creative research led by Richard Geoffroy.

Winemaking and aging

Dom Pérignon Vintage 2017 is the result of a slow metamorphosis unfolding over nearly nine years. The winemaking process scrupulously follows the principles of the Champagne method, with an absolute commitment to faithfully representing the vintage. Extended cellar aging allows the champagne to develop its exceptional complexity and aromatic depth.
