The current NV Ultra Brut is a blend of 52% Chardonnay and 48% Pinot Noir based on the 2007 vintage; it includes—as always—a reserve of the former Ultra Brut vintage, in this case 2004. In fact, Ultra Brut is produced only every three years on average, and the 2007 base is only the twelfth cuvée since the (1976), which was released in 1989. It is citrus-colored with some very nice white-golden reflections. Bright and fresh on the intensely brioche-scented nose, this vibrant, round and mouth-filling Champagne reveals a persistent mineral complexity and structure, along with very elegant, refreshing citrus fruit.

(55% Chardonnay and 45% Pinot Noir; no dosage; L53PA113356): Pale yellow. Racy, mineral- and ginger-tinged citrus and orchard fruits on the nose, with a subtle floral nuance adding complexity. On the palate, dry, incisive lime and green apple flavors show an intense, stony character and a touch of smokiness. Becomes fleshier with air and finishes spicy and long, with building citrus fruit character and very good focus.

Based on the 2016 vintage with 20% reserve wines, the Ultra Brut NV is 55% Chardonnay and 45% Pinot Noir, aged six years on fine lees and finished with zero dosage. In the glass, it shows a very pale gold color with subtle aromas of ripe citrus peel, yuzu, lemon cream biscuits, and chalk. The light-bodied, textured palate opens to a fine, pinpoint mousse imbued with vivacious acidity, bright salinity, and lemon freshness that carries through the long finish.

A broader palette than the BSA, with a Chardonnay-dominant profile. The nose is appealing and shows beautiful grape ripeness. This cuvée has the merit of expressing lovely fruit and a chalky character. The palate is broad and generous, with a lively mousse and decent length.

This no-dosage sparkler is immensely crisp and appley, with aromas of mint and licorice. If you're not expecting an austere, dry style, the green apple and lemon flavors might seem sour. It's 100% tangy and sharp, but it's precise for what it is. Not a cocktail party wine, but something like sushi will help it along.
