Tasting notes

Appearance
This wine reveals a pale yellow hue, both clear and radiant, enhanced by delicate greenish nuances.

Nose
The aromatic bouquet unveils a superb freshness, blending floral and mineral scents with indulgent aromas of butter and hazelnut, all elevated by subtle hints of exotic fruits.

Palate
From the first sip, the texture proves both dense and full of vivacity. The palate offers a beautiful aromatic complexity, dominated by a very elegant mineral and saline framework, accompanied by delicate floral flavours.

Food and wine pairings

This cuvée will pair wonderfully with seafood such as langoustines or scallops, as well as grilled or smoked fish. It will also match perfectly with summer salads or a platter of fresh goat cheeses.

Serving and cellaring

To fully appreciate this wine, it is recommended to serve it at a temperature of 12°C. This white wine can be enjoyed now or cellared until approximately 2030.

The pure and mineral expression of a great Pouilly-Fuissé Chardonnay

The estate

Located in the heart of Burgundy, in the Mâconnais, Château Fuissé is a true institution. While the origins of the building date back to the Middle Ages, the wine estate was founded in 1862, when it was acquired by the Vincent family. Today, Antoine Vincent, representing the fifth generation, is at the helm of the property. He carries on a family expertise across a vineyard of approximately forty hectares. The wines released under this prestigious label are recognised worldwide for their exceptional quality and their ability to faithfully convey the richness of the local terroirs.

The vineyard

The Les Combettes plot, covering 1.33 hectares, lies at the extreme south of the village combe, within the Pouilly-Fuissé appellation. This distinctive terroir enjoys a north-east exposure and stands out for its extremely stony soil, providing excellent natural drainage. Composed of 80% Bajocian limestone, it gives the wine all its lightness, finesse and minerality. The vines are planted at a density of 9,000 plants per hectare, for an average yield of 50 hl/ha, and are trained using a simple arched Guyot pruning method.

Winemaking and aging

The process begins with manual harvesting, followed by the transport of whole bunches to the press. The pneumatic pressing is very gentle, preceding a settling stage after decantation. Fermentation is initiated by indigenous yeasts directly in oak barrels aged three to five years. The wine then benefits from ageing on lees accompanied by bâtonnage, providing a discreet oaky character that supports the minerality without ever masking it. Malolactic fermentation is generally carried out. Before bottling, bentonite fining and light filtration may be performed, followed by a resting period in stainless steel tanks.
