Tasting

Colour
The colour reveals a ruby red hue, both bright and luminous.

Nose
The aromatic bouquet opens with notes of fresh red fruits such as redcurrant, strawberry, cherry, and raspberry, complemented by subtle vanilla and toasted notes from the aging process.

Palate
The attack is round and approachable, revealing an elegant structure. The tannins are supple and well-integrated, accompanying a persistent finish that maintains a fine balance between the fruit and delicate woody nuances.

Food and Wine Pairing

This red wine pairs perfectly with beef-based dishes, a pâté en croûte, or veal Orloff. It also goes very well with feathered game, mushroom risotto, or a fine charcuterie board.

Service and Storage

This Ladoix Village "Chaillot" 2024 can be enjoyed in its youth, but it will reveal its full complexity after a few years in the cellar, and can be enjoyed until around 2031.

The Elegance of a Pinot Noir from the Côte de Beaune

The Estate

Located in the heart of the Côte de Beaune, Domaine du Château de Meursault is a historic figure in Burgundy, whose origins date back to the 11th century with the founding of the Moulin Foulot estate. Now run by Olivier Halley, who acquired the property in 2012, the estate spans 67 hectares of vines. The domaine stands out for its strong environmental commitment, having obtained organic certification in 2022. Combining centuries-old traditions with modern technical expertise, the estate produces wines renowned for their faithful expression of Burgundian terroirs.

The Vineyard

The Chaillots plot, acquired in 2018, spans 2.80 hectares within the Ladoix appellation, in the northern part of the Côte de Beaune. Located at the bottom of the slope, the vines benefit from an east to southeast exposure. The terroir consists of clay-limestone soils mixed with flint fragments, giving the grapes a distinctive minerality. The vineyard work is carried out by hand, with the utmost respect for biodiversity.

The Vintage

The growing season began under humid weather conditions and moderate temperatures, favoring strong pressure from fungal diseases until véraison. However, September brought much milder weather, allowing the berries to reach optimal phenolic maturity ahead of a meticulous hand harvest.

Winemaking and Aging

After rigorous optical sorting and total destemming, the berries of the Ladoix Village "Chaillot" 2024 undergo a cold pre-fermentation maceration for fifteen to eighteen days. Alcoholic fermentation is then punctuated by daily punching-down and pumping-over. Finally, the wine is aged on fine lees for fifteen months in oak barrels, one-third of which are new, with regular lees stirring to enrich its texture.
