Relying on the oak for the time being, this white also boasts peach, apple, lemon cake, citronella and floral notes. Give this a little time to absorb the vanilla and toast flavors. Shows fine length, with the kaleidoscopic aftertaste revealing its potential. Best from 2028 through 2040. 60 cases made, 12 cases imported.

Tasting

Colour
The glass reveals a brilliant pale yellow hue with subtle golden highlights.

Nose
The bouquet opens on aromas of honey and candied citrus fruit, underscored by delicate floral and herbaceous nuances. Secondary notes of toasted hazelnut and vanilla, along with a fine minerality, complete this palette.

Palate
A crisp mineral attack introduces a full, unctuous and rich texture. The palate unfolds flavours of ripe stone fruit, such as peach and apricot, enriched with hints of exotic fruit and salted butter caramel. A lovely acidity balances the whole, leading into a finish of exceptional persistence.

Food and Wine Pairing
This wine pairs beautifully with fine fish such as turbot or sole prepared with a creamy sauce, as well as shellfish like lobster with beurre blanc. It is equally well suited to roast poultry, veal blanquette or aged cheeses such as Comté.

Service and Storage
To fully appreciate this grand cru, it is recommended to serve it between 12 and 14°C in large glasses. This wine can be enjoyed now, but it will continue to develop in the cellar until around 2035.

The Balance and Richness of a Great White Burgundy

The Estate
Founded in 1825 in Nuits-Saint-Georges, Domaine Faiveley is a true institution in Burgundy. Now led by Erwan and Eve Faiveley, representing the seventh generation, the estate oversees a 120-hectare vineyard spread across several sub-regions. The domaine stands out for its environmental commitment. Combining respect for historic terroirs with an international vision, the family continues a tradition of excellence while modernising its practices to craft wines of great finesse.

The Vineyard
The Bâtard-Montrachet plots cover just over 0.35 hectares and were planted in 1985 and 1997. This early-ripening, east-facing terroir rests on rich, stony clay-limestone soils with ochre hues. The steep slope ensures ideal natural drainage, while the vines are tended according to organic farming principles.

The Vintage
2023 was marked by a particularly warm growing season, with above-average temperatures and a significant water deficit from May to September. These conditions led to increased disease pressure requiring constant attention and resulted in uneven ripening. Despite these challenges, the harvest yielded generous quantities.

Winemaking and Aging
Following an entirely manual harvest, the grapes undergo a 24-hour static settling process. Alcoholic and malolactic fermentation take place naturally in French oak barrels. Ageing continues for 18 months, including a six-month period in stainless steel tanks for blending. The proportion of new oak barrels is 25%.
