Tasting
Colour
The wine reveals a lovely garnet hue, light and clear, enhanced by delicate violet highlights.
Nose
The nose opens with a very fresh bouquet dominated by red fruits such as cherry and raspberry, along with black fruits. Subtle notes of sweet spices and garrigue herbs complete this delectable aromatic profile.
Palate
On the palate, this red wine stands out for its delicate, crunchy and particularly juicy texture. The tannins are supple and well integrated, offering a fine balance underpinned by great freshness that carries through to a lively, thirst-quenching finish.
Food and wine pairings
This cuvée is ideal for convivial occasions. It pairs perfectly with a buffet-style aperitif, tapas and charcuterie, as well as summer grills, meat skewers or mixed salads.
Serving and cellaring
To fully appreciate the fruit and freshness of the "Arbalète and Coquelicots" 2025 cuvée, it is best served slightly chilled, at a temperature of between 15 and 16°C.

The estate
The estate is located in Trausse-Minervois, in the foothills of the Montagne Noire in the Languedoc. It was here that Domaine Jean-Baptiste Senat was founded in 1996. After studying political science, Jean-Baptiste decided to change course and take over the family land. Today, he runs the estate with his wife, Charlotte Senat. Pioneers in their approach, they farm some thirty hectares organically, strictly rejecting all chemical inputs. The estate is renowned for producing living, honest wines and has become a true role model for the new generation of winegrowers.
The vineyard
The grapes for this cuvée come from plots in the heart of the Minervois, which benefit from the cooling influence of the Montagne Noire. The vines, around thirty years old, are planted on clay-limestone soils that encourage deep rooting. The vineyard is bush-trained using the gobelet system, a traditional pruning method perfectly suited to the Mediterranean climate, with controlled yields to preserve the concentration and quality of the berries.
Winemaking and ageing
The "Arbalète and Coquelicots" 2025 cuvée is harvested by hand. In the cellar, the philosophy favours gentle extraction to preserve the fruit. The bunches are vatted whole, without destemming, for a short maceration lasting nine days. The wine is then aged exclusively in vats, with no oak whatsoever, to maintain the aromatic purity, freshness and delicious fruit that characterise this wine.
