A Saumur Blanc True to the Expression of Loire Chenin

The estate

Established in 2020 by Aurélia and Étienne Moly after twenty years living abroad in California and New Zealand, Domaine Moly now spans more than 4 hectares in Distré, near Saumur. The couple farms their plots organically across the Saumur and Saumur-Champigny appellations. Their minimalist philosophy favors an authentic expression of terroir through hand harvesting and the use of indigenous yeasts.

The vineyard

Bruit 2024 comes from three parcels within the Saumur appellation: Clos de la Croix de Noyant in Varrains, Les Gagneries in Champigny, and Sur Tiron in Brézé. The Chenin Blanc vines grow on clay-limestone soils typical of the region. Farmed organically and certified by Ecocert, the vineyard maintains a controlled yield of 36 hectoliters per hectare, encouraging concentration and grape quality.

Winemaking and aging

The grapes for the Bruit 2024 cuvée are harvested by hand into small 20-kilogram crates after rigorous sorting carried out directly in the vineyard. Following long-cycle pneumatic pressing and cold settling, alcoholic fermentation begins with indigenous yeasts. The musts are then moved by gravity into 225- and 400-liter barrels, where fermentation continues. Partial malolactic fermentation (70%) is carried out. Aging for this Loire wine takes place over 12 months in the estate’s underground cellar, without racking but with a few rounds of lees stirring.
