La Chablisienne : Chablis Village "Les Vénérables" 2020

The 2020 Chablis Les Vénérables, a selection from older vines, has a light nose of green apple, lemon thyme and a touch of wet pavement. Nicely focused. The palate is well balanced with good acidity; it's quite harmonious with a faint, peppery finish. A slightly more nuanced version of the La Sereine in some ways. Drink over three to five years.

The wine has a pale lemon-yellow color. The nose is generous, honeyed, fruity and slightly lactic, with an expressive minerality that emerges on the second sniff. It shows notes of chalk, limestone rock, lime, lemon, candied green apple, wax, hay, fresh hazelnut, along with a touch of quince, nutmeg, apple blossom, acacia and apricot. The palate is broad, slightly more oaky than the nose (with hints of toasted wood in the background), and marked by pronounced grapefruit bitterness. There are also notes of lime zest, lemon, fresh green apple, candied green apple, lemon zest, a touch of honey, wax and hay, as well as floral nuances (dried linden, acacia). The finish is mineral and zesty, persistent, with a slight dry limestone edge and vibrant acidity.
