Appearance
This wine displays a sparkling white hue with remarkable clarity.
Nose
The aromatic bouquet reveals great delicacy and lovely freshness. It unveils notes of fresh citrus, green apple and pear, enhanced by hints of orange zest, baked apple, crushed stone and subtle toasted nuances.
Palate
On the palate, this wine offers a creamy texture and beautiful tension. Particularly refreshing, the tasting is marked by citrus and grapefruit flavours, supported by a chalky minerality. Nuances of marzipan and toasted bread intertwine before leading to a smooth and elegant finish.
Food and wine pairings
This cuvée pairs wonderfully with seafood such as oysters or a sea bass ceviche with lime, as well as with pan-seared scallops. It also accompanies white meats in creamy mushroom sauce, roast veal, or vegetarian dishes such as asparagus risotto. As for cheeses, a fresh goat's cheese or an aged Comté will be excellent choices.

The estate
Located in Ambonnay, in the heart of the Champagne region, this family-owned estate saw its brand officially established in 1954 by Gérard Soutiran. Today, the third generation, embodied by Valérie Renaux-Soutiran and her husband Patrick Renaux, leads this prestigious property. The vineyard extends over approximately six hectares, mainly on terroirs classified as Grand Cru. The house stands out for its commitment to enhancing the authenticity of its terroir through sustainable viticultural practices, combining respect for Champagne traditions with a modern and environmentally conscious approach.
The vineyard
The vines benefit from the exceptional terroir of Ambonnay, a village classified as Grand Cru and located in the Montagne de Reims, an iconic area of the Champagne vineyards. The soils there are mainly composed of chalk with clay inclusions, offering optimal drainage while retaining the necessary moisture. The estate applies sustainable viticulture methods, conducting precise soil analyses to specifically target the application of organic fertilisers on the plots that require them.
Vinification and ageing
For the production of this Grand Cru Blanc de Blancs, the vinification process is carried out with particular care. A proportion of 20% of the wines is aged in oak barrels to provide additional complexity, while the rest is vinified in stainless steel tanks to preserve freshness. Bottling took place in May 2023, and disgorgement is scheduled for 2026.

This Grand Cru champagne is made exclusively from Chardonnay.
