Tasting

Appearance
This wine reveals a deep golden hue, enhanced by delicate amber reflections that bear witness to its lengthy maturation.

Nose
The bouquet is intensely aromatic and remarkably complex. It releases fragrances of fig, plum and pineapple, harmoniously rounded out by elegant touches of almond and toasted brioche, the fruits of its long rest on lees.

Palate
On the palate, the attack is vigorous and ample, offering a texture that is both robust and refined. A lingering freshness perfectly balances the richness of the whole. The effervescence, lively and exceptionally fine, brings a most pleasant creaminess. Concentrated aromas of strawberry and orange zest unfold, evolving towards spicy notes upon aeration. The finish, displaying excellent persistence, is marked by smoky and mineral touches, revealing a beautiful tension with saline and chalky nuances, alongside notes of honeycomb, salted cashew and green papaya.

Food and wine pairings
A true gastronomic wine, this champagne pairs wonderfully with white meats such as veal or poultry, as well as with parmesan. Its richness and structure also allow it to accompany red meats or aged cheeses. Thanks to its beautiful acidity and minerality, it sublimates oysters, but also high-quality sushi and sashimi, particularly with oily fish. It is equally impeccable served on its own as an aperitif.

Serving and cellaring
The Perle Noire Blanc de Noirs Grand Cru NM can be enjoyed until around 2035. To fully appreciate its aromatic complexity, it is recommended to serve it in a generously sized glass.

A champagne of remarkable elegance, a true reflection of the Ambonnay terroir

The estate
The history of this estate truly began in the 1950s when Gérard Soutiran placed his name on his first bottles. Located in Ambonnay, in the heart of Champagne, the estate stretches over approximately 6 hectares of vines. Today, the domain is led by Valérie Renaux (née Soutiran-Pelletier), president since 2007, alongside her husband Patrick Renaux who oversees production. This family estate stands out for its dedication to the expression of terroir and its long ageing periods, perpetuating a savoir-faire handed down through several generations.

The vineyard
The grapes come exclusively from the exceptional terroir of Ambonnay, a village classified as Grand Cru located at the southern tip of the Montagne de Reims, in the Champagne wine region. The vines flourish on south and south-east-facing slopes, ensuring ideal sunlight for ripening. The soil is distinguished by chalk particularly rich in magnesium, granting the wines a unique minerality with saline and iodised accents. The estate practises sustainable viticulture, limiting the use of herbicides and favouring organic fertilisers following rigorous soil analyses.

The blend
This cuvée is built mainly around the 2020 harvest. It is judiciously complemented by approximately 26% reserve wines, drawn from vintages ranging from 2013 to 2019.

Winemaking and ageing
The creation of the Perle Noire Blanc de Noirs Grand Cru is distinguished by vinification in Burgundy oak barrels for 58% of the wine, lending textural richness and complexity. Bottled in April 2021, the wine benefited from an extended ageing on lees of 5 to 8 years, well beyond the appellation's requirements, before being disgorged in April 2023.
