Tasting

Colour
The visual presentation reveals a delicate golden-yellow hue, bright and clear.

Nose
The bouquet opens with aromas of citrus fruits and fleshy yellow fruits reminiscent of ripe pear. Notes of white flowers intertwine with subtle hints of vanilla, toasted bread and bread crust, reflecting a well-mastered aging process.

Palate
The attack is fresh and shows lovely tension. The palate reveals a structure that is both precise and generous, underpinned by pronounced minerality and floral flavours. A delicate touch of vanilla envelops the whole before stretching into a persistent, saline finish.

Food and Wine Pairing

This white wine pairs beautifully with creamy poultry dishes, traditional snails or jambon persillé. It also goes wonderfully well with delicate white fish, wild mushroom preparations, and semi-matured goat cheeses.

Service and Storage

For optimal enjoyment, it is recommended to serve the Bourgogne "Terroir d'Exception" 2023 at a temperature of between 10 and 12°C, ideally in large glasses after decanting for one to two hours if desired. This wine can be enjoyed now or cellared until around 2030.

The Elegance and Minerality of a Côte de Beaune Wine

The Estate

The history of the Domaine du Château de Meursault began in the eleventh century in Burgundy, France. Now run by its current owner, Olivier Halley, who took the helm at the end of 2012, this historic estate oversees a vast vineyard spanning approximately 65 to 67 hectares. Spread across the Côte de Beaune, the vines benefit from an environmentally respectful approach. The estate stands out for its impressive medieval cellars and its strong commitment to biodiversity, illustrating a successful alliance between a thousand-year-old heritage and sustainable contemporary winegrowing.

The Vineyard

Grown on a micro-plot of 0.87 hectares planted in 1975, this cuvée comes from a terroir situated on the edge of the renowned Perrières climat in Bourgogne. East-facing and located mid-slope, the vines flourish on soils made up of hard Jurassic limestone, scree and marl. The whole benefits from organic certification and innovative agroecological initiatives, such as the planting of a protective riparian forest.

The Vintage

The year 2023 stood out for its particularly mild weather conditions, recognised for having provided an overall warm growing season across the region.

Winemaking and Aging

Following hand-harvesting and rigorous sorting, the grapes undergo gentle pressing followed by natural settling. Alcoholic fermentation takes place in oak barrels over roughly two weeks. The Bourgogne "Terroir d'Exception" 2023 is then aged on fine lees for 15 to 18 months in barrels (25% of which are new), with regular lees stirring during the first six months. Stabilisation in stainless steel tanks and light filtration complete the process.
