Color

The nose is expressive and intense, unveiling aromas of red and black fruits (cherry, raspberry, blackberry) accompanied by elegant notes of sweet spices. With aeration, the bouquet evolves toward nuances of tea and cocoa.

Palate

On the palate, this fleshy, generous wine offers beautiful harmony between richness and finesse. The velvety tannic structure lends the wine a seductive, refined character. The long, flavorful finish extends the fruity aromas perceived on the nose.

Food and Wine Pairing

This wine pairs ideally with roasted or braised meats such as beef, duck, pork, or game. It also matches perfectly with medium-strong to strong cheeses. A particularly successful suggestion: beef tenderloin in a spice crust.

The Estate

Founded in 1831 by Bernard Bichot, the Albert Bichot House embodies remarkable family continuity in Burgundy. Now led by Albéric Bichot, the sixth generation at the helm since 1996, this prestigious House remains independent and family-owned. It manages 107 hectares of vineyards spread across six outstanding estates covering the whole of Burgundy, four of which are certified organic. Albert Bichot stands out for its commitment to sustainable viticulture and its world-renowned expertise, notably crowned by the “Red Winemaker of the Year” title three times at the International Wine Challenge.

The Vineyard

Clos des Maréchaudes is a monopole of Domaine du Pavillon with an extremely rare feature: this walled 2-hectare clos combines two appellation levels—Grand Cru and Premier Cru—within the same property. Located at the foot of the Corton hill in Aloxe-Corton, this Climat enjoys an east-southeast exposure and is among the sunniest on the hillside, ensuring early, full ripening of the grapes. The Premier Cru parcel occupies the lower part of the vineyard, where the soil—less clayey and slightly deeper—gives the wine its hallmark finesse. The name "Maréchaudes" comes from the old French "maresche" meaning marsh, referring to the historical proximity of the Lauve spring.

Winemaking and Aging

The 2023 vintage in Bourgogne proved generous, allowing for meticulous sorting of the grapes to ensure optimal quality. Climatic conditions favored the development of healthy, well-balanced grapes, offering a fine expression of the terroir. The Aloxe-Corton 1er Cru "Clos des Maréchaudes" Domaine du Pavillon 2023 is crafted according to traditional Burgundian methods, with particular attention paid to preserving the expression of the terroir. Winemaking follows the principles of organic farming applied at the estate, ensuring a wine that is authentic and true to its origin.
