The Albert Bichot House, founded in 1831 by Bernard Bichot in Monthélie, is an independent, family-run institution in Burgundian winemaking. Led since 1996 by Albéric Bichot, the sixth generation at the helm of the company, the House now owns vineyards spread across several estates covering Burgundy from north to south. Domaine Long-Depaquit in Chablis, acquired in 1970, is among the House’s most important estates. The House stands out for its pioneering commitment to organic farming, with several certified estates and many organic cuvées available. Albert Bichot embodies Burgundian excellence through a philosophy that combines respect for terroirs, non-interventionist winemaking, and a sustainable vision.
The Vineyard
The "Les Lys" parcel lies on the left bank of the Serein, overlooking the villages of Chablis and Milly, halfway up the slope. It benefits from an atypical east-northeast exposure, an inherently cool area where grapes ripen slowly and gradually. This slow maturation ensures remarkable finesse and vibrancy in the wines. The vines are planted on clay soils with few stones, over a Kimmeridgian marl subsoil—geology more than one hundred and fifty million years old. This distinctive substrate, rich in marl and small oyster fossils, gives the wines their unique typicity, crystalline purity, and signature minerality.
