Description

Characteristics and tasting notes of the Corton Charlemagne Grand Cru Domaine du Pavillon 2024 by Albert Bichot

Tasting

Appearance
This great white wine reveals a deep, vibrant yellow hue, typical of its rank, which will evolve towards superb golden reflections over the years.

Nose
Highly complex, the bouquet unveils generous aromas of white and yellow fruits such as peach and pear, intimately intertwined with hints of citrus and exotic fruits. Subtle mineral, spicy and buttery notes complete the ensemble, with a possible evolution towards indulgent honeyed nuances.

Palate
Endowed with remarkable concentration and great distinction, this wine offers perfect balance. Its ample, fleshy texture is underpinned by beautiful tension, culminating in an intense finish of exceptional length.

Food and wine pairings
This cuvée sublimates noble fish and refined shellfish, such as scallops. It also pairs wonderfully with foie gras, as well as roasted poultry or white meats, ideally served with a creamy mushroom sauce.

Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at an ideal temperature between 12 and 14°C. Its cellaring potential ranges from 5 to 10 years and beyond.

An exceptional Corton-Charlemagne by Albert Bichot, the elegance of Burgundy

The estate
Founded in 1831 by Bernard Bichot, the Albert Bichot house is an emblematic figure of Burgundy. Today led by Albéric Bichot, representing the sixth generation, this independent family-owned estate oversees a vineyard of approximately 107 hectares spread across six prestigious domains. Deeply committed to an environmental approach, the brand stands out through its conversion to organic viticulture and its sustainable philosophy. Combining high-end négoce activity with the mastery of its own vines, it also remains a historic and essential partner of the famed Hospices de Beaune.

The vineyard
This Corton-Charlemagne comes from an exclusive 1.20-hectare parcel located on the Climat Les Languettes, historically nicknamed "Vigne Dieu". Nestled on the south-south-east slope of the Corton hill, the vines, on average 35 to 40 years old, thrive on brown limestone soils resting on Argovian marls. This exceptional terroir, farmed organically, is renowned for producing pure, powerful white wines of great expressiveness.

The vintage
The 2024 year was marked by contrasting weather conditions. The early summer saw significant rainfall and reduced sunshine during the months of June and July. Fortunately, August proved much drier and brighter, offering ideal conditions to cleanse the bunches and ensure optimal, even ripening ahead of the September harvest.

Winemaking and aging
The process begins with hand harvesting followed by rigorous berry sorting. Pressing is carried out slowly and at moderate pressure to preserve the quality of the juices. After alcoholic fermentation, the wine benefits from ageing on fine lees in oak barrels for 14 to 16 months, with a proportion of 30 to 35% new barrels, allowing the oak influence to integrate with great elegance.
