Colour
This wine shows a red hue, true to the classic expression of Pinot Noir grown on the terroirs of the Côte de Nuits.

Nose
The nose is intense and generous, dominated by aromas of red and black fruit, including raspberry, blackcurrant and slightly tangy wild cherry. A delicate touch of oak enriches this palette, while notes of leather gradually emerge. With time, the bouquet gains in complexity, giving way to more tertiary nuances of forest floor and spice.

Palate
On the palate, this Premier Cru is full and fleshy, carried by a generous texture that is perfectly held in check by a fine balance. Red fruit flavours mingle with hints of liquorice, on a fine tannic structure that leads into a long, silky and delightfully fruity finish.

Food and wine pairing
This wine is ideally suited to roasted or slow-cooked red meats, whether beef, lamb, duck or small game. It is also very much at home with a medallion of venison in a mushroom sauce, where the wine's forest floor notes find a beautiful echo. Finally, it pairs willingly with cheeses of medium maturity.

Serving and cellaring
The Morey-Saint-Denis 1er Cru "Les Sorbets" 2023 is best served between 16 and 17°C, a temperature that preserves all the aromatic finesse of Pinot Noir while respecting its structure. This wine has an ageing potential of 5 to 7 years and beyond.

A Morey-Saint-Denis 1er Cru by Albert Bichot, Balancing Power and Finesse

The estate
Founded in 1831 in Monthélie by Bernard Bichot, the house of Albert Bichot settled permanently in Beaune in 1912 and has become one of the last great family-owned houses in Burgundy. Led today by Albéric Bichot, the sixth generation at the helm of the company, it brings together more than 100 hectares of vines spread across six domaines, from Chablis to Beaujolais. Albert Bichot combines négoce and winegrowing estates, with a strong focus on mastery of terroir and sustainable viticulture.

The vineyard
The "Les Sorbets" climat is located in the commune of Morey-Saint-Denis, between Gevrey-Chambertin and Chambolle-Musigny, at an altitude of around 250 metres. This Premier Cru lies on brown clay soils, set on a Bathonian limestone substrate and enriched with Upper Bajocian marls and stony colluvium, offering a terroir well suited to producing wines that are both structured and complex.

Winemaking and ageing
The Morey-Saint-Denis 1er Cru "Les Sorbets" 2023 is vinified using traditional, deliberately low-intervention methods, in order to best preserve the expression of the terroir. The wine is then gently transferred by gravity to the cellars, where it is aged in oak barrels of varied origins and toasting levels, generally for 12 to 18 months, in a constant pursuit of subtle, perfectly integrated oak.

This wine is made from 100% Pinot Noir, the emblematic grape variety of the great reds of the Côte de Nuits.
