Tasting
Color
The Saint-Romain Village 2024 displays a pale straw-yellow color with still slightly green highlights, a testament to its youth and to the freshness typical of vines grown at altitude.
Nose
The nose is fine and refined, driven by notes of white flowers and crisp green apple, accompanied by a hint of citrus zest. A chalky minerality completes the bouquet, recalling the imprint of the limestone subsoil on which the vines grow.
Palate
The medium-bodied palate charms with its supple breadth and slightly fleshy texture, underpinned by a lively, taut acidity. The minerality extends through to the finish in a saline form, bringing freshness and elegance to a palate that is otherwise generous and well balanced.
Food and Wine Pairing
This wine pairs beautifully with delicately prepared fish and seafood, and also shows well alongside roasted or braised poultry and white meats.
Serving and Cellaring

The Estate
Founded in 1831 in Monthélie by Bernard Bichot, the house of Albert Bichot later settled in the heart of Beaune, in Burgundy, where it remains a family-owned business today. Since 1996, Albéric Bichot, a representative of the sixth generation, has been at its helm. With more than 100 hectares spread across six estates, from the north to the south of Burgundy, Albert Bichot combines the activities of winegrower and négociant-vinificateur-éleveur, with a firm commitment to sustainable and organic viticulture.
The Vineyard
The vines used for the Saint-Romain Village are planted between 280 and 400 meters above sea level, at the bottom of a combe characteristic of the appellation, bordered by limestone cliffs. The brown, predominantly calcareous soils, resting on marl, give the Chardonnay a particular tension and freshness, typical of this high-altitude terroir of the Côte de Beaune.
Vinification and Aging
To produce the Saint-Romain Village 2024, the grapes are hand-harvested and sorted before being slowly pressed at moderate pressure to preserve the integrity of the fruit. The wine is then aged on fine lees in oak barrels for 14 to 15 months, with 15 to 20% new oak, a measured use of wood that allows the purity of the terroir to express itself fully.
