Tasting

Appearance
The wine shows a red hue, reminiscent of the great Pinot Noirs crafted in the Côte de Beaune.

Nose
The nose is complex, revealing red fruit aromas such as cherry and raspberry, mingled with subtle spicy and lightly oaky notes.

Palate
The palate is charming, with generous volume and a fine structure of melted tannins. The long, highly aromatic finish confirms the elegance of this premier cru.

Food and Wine Pairing

This wine is ideally paired with roasted red and white meats, or those served in sauce, as well as medium-bodied cheeses. It is particularly delicious with a veal blanquette with morels.

A Volnay 1er Cru "Les Santenots" Born on the Land of Meursault

The Estate

Founded in 1831 in Monthélie by Bernard Bichot, the house of Albert Bichot is now based in Beaune, in the heart of Burgundy. It has been led since 1996 by Albéric Bichot, who represents the sixth generation of the family. A négociant that also vinifies and matures its own wines, Albert Bichot owns six estates spread from the north to the south of Burgundy, including the Domaine du Pavillon in the Côte de Beaune. The house farms more than 100 hectares of vines using reasoned viticulture or organic farming, with constant attention to respect for the terroir.

The Vineyard

The Santenots climat, from which this Volnay 1er Cru originates, illustrates a curiosity of the Burgundian mosaic: although it is part of the Volnay appellation for red wines, it is in fact located in the commune of Meursault, a village nevertheless renowned for its white wines. This terroir is particularly well suited to Pinot Noir, allowing it to express all its finesse. The vines are managed by the Domaine du Pavillon, an Albert Bichot estate located south of Pommard in the Côte de Beaune, which practises organic viticulture respectful of nature's delicate balances.

Winemaking and Ageing

The winemaking of the Volnay 1er Cru "Les Santenots" Dom. du Pavillon 2023 reflects the low-intervention philosophy of the house of Albert Bichot, which is keen to preserve the expression of the terroir. The wine is transferred by gravity to the cellars of the Domaine du Pavillon, where it is aged in French oak barrels for 12 to 18 months in keeping with the house's practice, resulting in a subtle, perfectly integrated oak influence.

Grape Variety

This wine is made from 100% Pinot Noir, the emblematic grape variety of the great red wines of Burgundy and the only grape variety permitted for red wines of the Volnay 1er Cru appellation.
