Tasting

Appearance
A bright straw-yellow hue, occasionally adorned with subtle green reflections. Its effervescence stands out with an exceptionally fine and persistent perlage, forming a particularly creamy and velvety mousse.

Nose
The aromatic bouquet opens on delicate notes of white flowers such as acacia and linden blossom, intertwined with hints of candied citrus and lemon. With aeration, indulgent aromas of orchard fruits, brioche, bread crust and hazelnut elegantly enrich the whole.

Palate
The attack is caressing and silky, carried by the softness of the bubbles. The mid-palate reveals lovely tension thanks to a vivid, mouthwatering acidity. Fruity flavours and a saline touch enliven the palate, extending into a long, persistent finish marked by subtle notes of almond and hazelnut.

Food and wine pairings
This cuvée pairs wonderfully with delicate dishes. It will enhance starters based on raw fish such as ceviche or tartare, as well as seafood and shellfish. It also brilliantly accompanies a creamy risotto, roasted white meats or fresh and soft cheeses. It is likewise an ideal choice for a gourmet aperitif.

The estate
Founded in 1968 by Maurizio Zanella, who remains its president to this day, the Ca' del Bosco estate is located in Erbusco, in Lombardy. Part of the Santa Margherita Wine Group since 1994, the property spans 450 hectares, including approximately 280 hectares of vines cultivated organically. A true pioneer, this iconic brand stands out for its approach combining art, technological innovation and respect for the environment. Its reputation rests in particular on unique methods, such as the exclusive washing of the grape clusters, elevating its wines to the pinnacle of Italian excellence.

The vineyard
The grapes come from exceptional terroirs at the heart of the Franciacorta appellation. The Chardonnay is sourced from twenty-five plots averaging twenty-seven years of age, spread across the communes of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. The Pinot Blanc, for its part, comes from two vineyards located in Passirano, with an average age of thirty-two years.

The vintage
The year 2021 began with a mild and dry winter, prompting an early budburst in the vines. The growing cycle was then slowed by late frosts at the beginning of April, followed by a cold and damp period that delayed flowering by a week. Despite a violent hailstorm at the end of July and these capricious weather conditions, the harvested grapes achieved remarkable balance.

Winemaking and aging
The grape clusters are harvested by hand in small crates, chilled, then meticulously washed and dried. Pressing is carried out shielded from oxygen. The base wines then ferment in small oak barrels where they mature for five months. The blending of the twenty-seven base wines takes place seven months after the harvest. Tirage is performed in April 2022. This Italian wine benefits from an average of fifty-three months of ageing on the lees. Finally, disgorgement is carried out without oxygen, and each bottle is marked to ensure its traceability.
