Description
## Tasting notes and recommendations for Ceretto's Barbaresco 2023
**Tasting**
*Colour*
This wine reveals a brilliant ruby hue, adorned with subtle garnet reflections. *Nose*
The bouquet displays remarkable complexity, blending elegant scents of violet and dried flowers with touches of medicinal and balsamic herbs. These are joined by aromas of raspberry, morello cherry and blackcurrant, enhanced by nuances of liquorice root, sweet spices, bitter cocoa, roasted notes and blond tobacco. *Palate*
With a medium structure, this wine offers a tannic framework of great finesse, almost silky. The fragrant and nuanced flavours unfold into a lingering finish, marked by lovely freshness and a savoury harmony. **Food and wine pairing**
This cuvée pairs beautifully with flavourful, slightly fatty meats such as a fine cut of beef, braised pork or duck confit. It also perfectly accompanies slow-cooked dishes, mushroom or truffle risottos, as well as fresh pasta served with a meat ragù. When it comes to cheese, opt for hard, salty varieties such as Parmesan or Pecorino. **Serving and cellaring**
To fully appreciate the Barbaresco 2023, it is recommended to serve it at a temperature between 16 and 18°C, taking care to decant it or open it 30 to 45 minutes before tasting. Thanks to its solid structure and extended ageing, this wine has significant cellaring potential. ## A fresh and elegant Barbaresco from Ceretto **The estate**
Founded in the 1930s by Riccardo Ceretto, the estate has established itself as a true benchmark name in Piedmont. Located near Alba, this family-run business is now led by the second and third generations, with Alessandro Ceretto heading up the technical direction. The vineyard spans approximately 120 to 160 hectares, including 21 prestigious hectares dedicated to the region's flagship appellations. A pioneer in showcasing the terroir's crus, the estate stands out for its environmental commitment, combining stylistic modernity with sustainable viticulture. **The vineyard**
The grapes come from plots located on the heights of the commune of Treiso, as well as from the renowned Asili cru, at the heart of the Barbaresco appellation. These high-hillside terroirs benefit from marl-limestone soils rich in ancient clays and sands. All the vines are farmed according to certified organic principles, complemented by rigorous biodynamic practices to preserve the natural balance and biodiversity of the environment. **The vintage**
2023 stands out for climatic conditions that allowed for an ideal balance, giving the grapes lovely fruity ripeness while retaining excellent natural freshness. **Winemaking and ageing**
The making of the Barbaresco 2023 begins with an extended skin maceration during fermentation, allowing the quintessence of the grape variety to be extracted. This Italian wine then undergoes an extended ageing period of twenty-four months, split between oak barrels and large foudres, before completing its refinement in bottle. **Grape variety**
