Decanter

A breath of fresh air, whether on its own merits or simply by contrast with two preceding, more unyielding Listracs: this shines brightly. The nose is attractively floral, with plum, blackberry, and cassis evoking ripeness and charm. The palate follows suit with smooth, polished tannins, though they do gather themselves into a slightly steely grip on the finish: not surprising in this vintage. Still, a notably strong showing and one of the most convincing recent performances from Château Chasse-Spleen. A a wine that reminds you why the estate can be so compelling.

Hints of fresh wood lead into floral and chalky notes, with a touch of dark berries. Juicy on the attack, the wine shows a lively, fresh profile. Its tannins, powerful and perfectly integrated, bring drive and breadth, while the acidic structure underlines the freshness. A flavorful, refined and promising wine. It reminds me of great Chasse-Spleen and has excellent ageing potential.

Dark fruit, smoky notes, a hint of licorice, along with some floral tones; a rich, full attack on the palate, then it tightens up, with pronounced tannins, crisp fruit, spicy and juicy, and a very good length, echoing dark fruit on the finish. One of the best Chasse-Spleen in a long time.

Appearance
This wine reveals a deep Bordeaux red color, both clear and radiant.

Nose
The initial nose expresses aromas of blackberry, violet, and flint. After aeration, the bouquet opens up and becomes richer with floral notes, black berries, and a delicate hint of pink peppercorn.

Palate
The attack is clean and precise, introducing a broad and enveloping texture, perfectly supported by very fine tannins. The overall balance stands out for its tension and freshness, leading to a long, spice-accented finish.

Food and wine pairings
This red wine pairs ideally with richly flavored meats such as beef, lamb, veal, or game, like roasted venison fillet. It also pairs beautifully with poultry, particularly duck, as well as traditional Bordeaux dishes with brown sauces.

Service and cellaring

The classic elegance of a great Moulis wine

The estate
Located in the renowned region of Bordeaux, Château Chasse-Spleen was officially named in 1863 by Rosa Ferrière. This emblematic estate has built a strong reputation thanks to the consistent quality of its wines, often compared to the finest crus. Acquired by the Merlaut family in 1976, the vineyard is now managed by Céline and Jean-Pierre Villars-Foubet. Under their leadership, the estate continues a philosophy combining respect for the environment with the authentic expression of its terroir, thus reinforcing its essential status on the Left Bank.

The vineyard
The terroir of the Moulis-en-Médoc appellation offers exceptional conditions for vine growing. The estate’s production area covers 90 hectares, with a high planting density reaching 9,200 vines per hectare. The vines, averaging 40 years of age, thrive on soils composed of gravel and sandy gravel, resting on clay-limestone subsoils and clay over limestone.

The vintage
The year began with a wetter-than-cold winter, followed by a rainy April. These precipitations helped build excellent water reserves in the soils, a valuable asset in facing the hot and dry months that followed. Four brief periods of intense heat boosted grape ripening without stressing the vines. Harvest then took place under calm and very favorable weather conditions, highlighting the vines’ strong resilience to climatic variations.

Vinification and aging
For Château Chasse-Spleen 2025, aging takes place over a period of 16 months in barrels. To refine the wine’s structure while preserving the brightness of the fruit, 35% new oak barrels are used during this stage. Alcohol: 12.5% vol.

Grape varieties
Château Chasse-Spleen 2025 is made from a blend of 63% cabernet sauvignon, 30% merlot, 5% petit verdot, and 2% cabernet franc.
