This Pouilly-Fuissé enhances noble crustaceans such as lobster, spiny lobster, and king prawns. It pairs perfectly with noble fish, sole almondine, or cooked foie gras. White meats in cream sauce, particularly veal and poultry, are also excellent pairings. Goat cheeses and mild cheeses complement this wine harmoniously. Its aromatic power also allows it to accompany spicy exotic dishes like fish tagines or sweet and sour shrimp.
Service and storage
The Pouilly-Fuissé 1er Cru "La Maréchaude" 2020 is ideally served between 13 and 14°C. It can be enjoyed now to take advantage of its vibrant youth, but its structure also allows it to be cellared until around 2026, or even until around 2030 depending on storage conditions.

The estate
Founded in 1945 in the village of Fuissé in the heart of the Mâconnais in Burgundy, Domaine Cordier Père et Fils was taken over in 1971 by Roger Cordier. Christophe Cordier, the founder's grandson, currently manages the estate and has led its remarkable expansion, growing from 12 to 35 hectares. The estate manages an exceptional mosaic of over 120 Chardonnay plots across 31.5 hectares spread over 9 Mâconnais villages. Since 2018, Christophe Cordier has applied organic and biodynamic viticulture principles, with Organic Agriculture and DEMETER certification obtained starting with the 2024 harvest. The estate distinguishes itself with its two gravity-fed, air-conditioned cellars and its internationally recognized quest for excellence.
The vineyard
The La Maréchaude Climat, officially recognized as a Premier Cru since November 2020, is located on the clay and limestone slopes of the Roche de Vergisson, at an altitude of 350 meters, with a south/south-west exposure. The very stony and deep soils consist of gray-blue marl from the Early Jurassic period. The clay, present in high proportions, allows for the production of wines with very great aromatic density, while the limestone confers harmony and minerality. This Pouilly-Fuissé terroir benefits from significant temperature variations allowing for a fine expression of Chardonnay.
Winemaking and aging
The harvest for the Pouilly-Fuissé 1er Cru "La Maréchaude" 2020 is exclusively manual, plot by plot. Winemaking is carried out solely with indigenous yeasts. Aging takes place on the original lees in French oak barrels from high forests with a very fine grain and a house toast. Bottling is done gently by gravity, without fining and with very light filtration.
