Tasting

Appearance

The appearance displays a pale yellow hue with golden and green tints, bearing witness to the youth and freshness of this white Burgundy wine.

Nose

The nose reveals a beautiful aromatic complexity with notes of white fruit such as apple and pear, accompanied by nuances of citrus. Floral touches of hawthorn and acacia mingle with a marked minerality evoking gunflint, the signature of the limestone terroir of Les Perrières.

Palate

On the palate, this Pouilly-Fuissé 1er cru "Les Perrières" 2020 expresses a remarkable balance between acidity and structure. The texture is both elegant and precise, carried by a beautiful mineral tension characteristic of the limestone and siliceous soils of the Climat. Aromas of white fruit persist with intensity, supported by an invigorating freshness. The finish stands out for its length and assertive minerality.

Food and wine pairings

This dry white wine is the ideal accompaniment for poached or grilled noble fish, refined seafood such as scallops or langoustines. It also pairs perfectly with poultry in cream and mushroom sauce, as well as aged cheeses such as Comté or goat cheeses.

Service and storage

The Pouilly-Fuissé 1er cru "Les Perrières" 2020 is best served at a temperature of around 12°C, allowing for an optimal expression of its aromas and minerality.

A Pouilly-Fuissé Premier Cru combining minerality and Burgundian elegance

The estate

Founded in 1945 in the village of Fuissé in the heart of the Mâconnais, Domaine Cordier Père et Fils now spans approximately 32 hectares distributed across more than 120 plots in nine villages. Managed since 1987 by Christophe Cordier, the founder's grandson, this family estate has risen to become a benchmark in southern Burgundy. Recognized by Robert Parker as an exceptional producer, the estate obtained organic and Demeter biodynamic certifications in 2024. Christophe Cordier's philosophy is based on meticulous viticulture and winemaking that respects the terroir, notably using a gravity-fed winery inaugurated in 2015.

The vineyard

The "Les Perrières" Climat, whose name evokes the abundance of limestone stones, has been among the 22 terroirs classified as Premier Cru in Pouilly-Fuissé since 2020. This plot of approximately one hectare benefits from a southeast exposure mid-slope, offering optimal sunshine while preserving natural freshness. The deep clay-silt soils rest on a limestone and marl substrate, while the surface features siliceous and stony elements. This complex geological composition gives the wine its characteristic minerality and aging potential. The limestone terroir of Les Perrières expresses all the typicity of great white Burgundy wines.

The vintage

The 2020 vintage in Burgundy is characterized by contrasting weather conditions. A mild winter preceded a warm and dry spring, favoring early budburst, about three weeks ahead of normal. The summer was distinguished by intense heat and marked drought, offset by cool nights leading up to the harvest. These cool nocturnal temperatures helped preserve the natural acidity of the grapes despite the daytime heat. The white harvest began on August 23, 2020, a month earlier than the usual average. The 2020 vintage is recognized for its excellent balance between freshness and generosity, producing age-worthy white wines with beautiful acidic structure.

Winemaking and aging

The vinification of the Pouilly-Fuissé 1er cru "Les Perrières" 2020 is carried out with indigenous yeasts, allowing fermentations to occur naturally. Aging continues for approximately 18 months on fine lees in oak barrels of various sizes, combining 228-liter Burgundy barrels and larger casks. This prolonged aging period develops the wine's aromatic complexity and texture while preserving its minerality. Bottling is done by gravity, without mechanical pumping, with light filtration and no fining to respect the wine's integrity and preserve its full aromatic expression.
