Tasting

Colour
The colour reveals a pale to medium yellow hue, illuminated by brilliant silvery-green highlights.

Nose
The aromatic bouquet reveals scents of ripe orchard fruits, such as apple, pear and quince, underscored by citrus notes such as lemon zest and white grapefruit. Delicate floral touches of acacia and honeysuckle intertwine with a chalky minerality, all subtly enhanced by light toasted nuances from the aging process.

Palate
The attack is lively and structured by a lovely acidity, offering fresh citrus flavours and a pronounced minerality. The mid-palate, pleasantly round yet perfectly dry, unfolds aromas of pome fruits accompanied by subtle herbaceous notes. The finish is remarkably long and persistent, marked by a chalky, saline purity.

Food and wine pairing

This white wine pairs beautifully with noble seafood such as blue lobster or langoustines, as well as with raw preparations like carpaccio or fish tartare. It also perfectly complements simply prepared flatfish, delicate white meats in a light sauce, grilled spring vegetables, or a fresh goat cheese.

Service and storage

To fully release its aromatic complexity, it is recommended to decant the "Clos de Venise" 2024 before enjoying it at an ideal temperature of between 10 and 12°C. Blessed with exceptional aging potential, this wine can be enjoyed now but will continue to evolve favourably until around 2039.

The mineral and precise expression of a great white wine from the Loire Valley

The estate

Officially founded in 1988, Domaine de la Taille Aux Loups truly took off when it was acquired by the visionary Jacky Blot in 1992. Located in Montlouis-sur-Loire, in the Loire Valley, the estate today spans approximately 45 hectares. A pioneer of organic viticulture and the parcel-by-parcel approach in the region, the estate is renowned for its remarkably pure terroir wines. Since the passing of his father in May 2023, Jean-Philippe Blot, the current owner, has been running the estate with the same philosophy of excellence and respect for nature.

The vineyard

The cuvée comes from a confidential one-hectare plot located on a first slope in the commune of Noizay. Facing south-southeast, the vines, aged between 40 and 50 years, thrive on a distinctive terroir composed of clay and flint resting on a limestone base. The vineyard is farmed under certified organic agriculture, with no synthetic chemical products, favouring soil tilling and entirely manual harvesting. This rigorous approach allows for the production of a great Vin de France that faithfully expresses its terroir.

Winemaking and aging

For the "Clos de Venise" 2024, the grapes are gently pressed using a pneumatic system before gravity-based settling. Alcoholic fermentation takes place using indigenous yeasts in Burgundian oak barrels filled to the brim to prevent any oxidation. This slow process lasts around six months, and malolactic fermentation is deliberately blocked to preserve a lovely freshness. Aging then continues for 12 to 18 months in barrels (divided equally between new barrels and those that have held one, two or three wines), accompanied by regular lees stirring. The wine is finally racked without harsh filtration.

Chenin Blanc (100%). An emblematic grape variety of the Loire Valley, Chenin Blanc gives this cuvée a remarkable mineral tension and exceptional aging potential.
