Tasting

Appearance

The appearance displays a deep red color with purple tints, revealing a velvety and silky aspect.

Nose

The bouquet unveils a beautiful aromatic complexity with notes of small red and black fruit, notably cherry and blackberry. Spicy aromas of licorice and pepper enrich the whole, bringing a warm and piquant dimension.

Palate

On the palate, the wine is ample and structured, with perfectly integrated and refined tannins. The texture generously coats the palate, revealing the complexity suggested on the nose with its fruity, spicy and mineral notes. The finish stands out for its remarkable length and saline character, a signature of the terroir's clay soils.

Food and wine pairings

This Grand Cru pairs beautifully with feathered game meats such as duck or pigeon prepared with red fruit. It also pairs excellently with lamb braised with Herbes de Provence, refined cuts of beef garnished with foie gras or truffle, as well as mushroom risottos. As for cheese, opt for matured semi-firm cheeses such as Comté or Reblochon.

Service and cellaring

The Echezeaux Grand Cru 2021 is best served between 13 and 14°C. Opening the bottle at least one hour before serving is recommended to allow the wine to fully express itself. This wine can be appreciated from 2027 and will continue to evolve until around 2034, or even until 2041 for lovers of more aged wines.

The estate

Domaine des Perdrix was acquired in 1996 by the Devillard family, bringing five generations of winemaking expertise. The property underwent a major transformation with significant investments in vinification facilities. The estate takes its name from the prestigious "Aux Perdrix" Premier Cru in Nuits-Saint-Georges, of which it owns 99% of the surface area. With 15 hectares of vines, more than half of which are classified as Premier Cru or Grand Cru, Domaine des Perdrix has established itself as a reference in the Côte de Nuits in Burgundy.

The vineyard

Echezeaux represents one of the largest Grand Crus in Burgundy with 36 hectares. The estate's plots, covering 1.14 hectares, are located mainly in the "Echezeaux du Dessus" section, considered the most qualitative of the appellation. Planted in 1922 and 1945, these vines benefit from a south-south-east exposure on clay-limestone soils with a dominance of clay. This composition confers depth and a velvety texture to the wines. The vineyard is managed according to the principles of sustainable agriculture, with a planting density of 10,000 vines per hectare and an average vine age of 35 years. Harvesting is exclusively manual with meticulous sorting.

Vinification and aging

After manual harvesting and rigorous sorting, the grapes for the Echezeaux Grand Cru 2021 were partially destemmed, keeping 30% whole bunches. Cold pre-fermentation maceration for four to six days preceded alcoholic fermentation for 15 days using indigenous yeasts. Punch-downs were carried out during this period for gentle extraction. Aging took place over 17 months in 228-liter French oak barrels, with 40% new wood and 60% one-wine barrels, originating from the forests of Burgundy, Allier, and Vosges. The wine then spent two months in stainless steel vats before bottling.
