The aromatic bouquet stands out for its great complexity, blending red and black fruit aromas such as blackberry, blueberry and blackcurrant, subtly enhanced by spicy notes typical of its terroir.

The palate offers a perfect balance between ripe fruit expression and lovely mineral tension. With moderate tannins, this red wine is defined by its refinement, structural clarity and natural freshness.

Food and wine pairing

This wine pairs wonderfully with grilled red meats or dishes in sauce, as well as with hard cheeses. It will also beautifully complement feathered game dishes, such as duck, goose or small wild birds.

For an optimal tasting experience, it is recommended to serve this Savigny-Les-Beaune 1er Cru "Fourneaux" 2022 at a temperature of 16°C. This wine has fine ageing potential and will continue to evolve favourably until around 2037.

The estate

Founded in 1997, Domaine Nicolas Rossignol is located in Beaune, at the heart of the Burgundy wine region in France. Representing the fifth generation of winegrowers in his family, Nicolas Rossignol, the current owner, oversees this vineyard of around 17 hectares spread across nearly 30 appellations. Drawing on his international experience, he has developed a unique philosophy, moving "from extraction to infusion". The estate stands out for its environmentally friendly approach, inspired by biodynamics and guided by the lunar calendar, aiming to produce wines of great purity that faithfully express their terroir.

The vineyard

The Savigny-Les-Beaune 1er Cru "Fourneaux" comes from a historic plot located on a gently sloping hillside with an ideal south-west exposure. The vines thrive on soils composed of Bathonian limestone marls, dotted with angular stones, offering perfect intermediate drainage. The vineyard is cultivated without any synthetic herbicides, favouring mechanical and manual soil work to preserve biodiversity and the health of the ecosystem.

The vintage

The year 2022 was marked by extreme weather conditions. Following a late bud break in spring, the vines experienced rapid growth thanks to exceptional temperatures in May and June, leading to early flowering. The summer was punctuated by four heatwaves and a severe drought, although some variable rainfall and hail were observed in June. Nevertheless, this intense heat ensured perfect grape health, allowing for a healthy and high-quality harvest.

Winemaking and ageing

The grapes for the Savigny-Les-Beaune 1er Cru "Fourneaux" 2022 are entirely hand-harvested, with rigorous sorting on a vibrating table followed by a dedicated team. Alcoholic fermentation begins naturally thanks to indigenous yeasts and lasts between six and eight days. The wine is then transferred by gravity for ageing on fine lees for 10 to 20 months in oak barrels (with the proportion of new oak ranging from 0 to 50%). Malolactic fermentation is deliberately delayed until the following spring to increase aromatic complexity.
