Tasting
Colour
This Savennières displays a bright, luminous pale yellow hue with green highlights, testifying to the freshness and youth of this vintage.
Nose
The nose opens with delicate floral notes, accompanied by aromas of perfectly ripe white fruit, in a register that is both generous and precise, typical of Chenin Blanc from these schist and sand terroirs.
Palate
The palate charms with its fine, airy texture, inherited from the windblown sands, before closing on a dry finish, drawn out by noble bitterness from the schist bedrock. The whole combines generosity and minerality in a balance full of tension.
Food and Wine Pairing
La Saponaire 2024 is an ideal match for fish and shellfish, whether white fish or lightly creamy or spiced preparations such as a prawn curry. It also pairs well with spring vegetables, particularly asparagus, whose slight bitterness it complements. White meats, veal and fresh cheeses round out the pairing possibilities for this wine.
Serving and Cellaring
La Saponaire 2024 is best enjoyed after ample aeration, either decanted or with the bottle opened in advance, at a serving temperature of between 12 and 14°C, to fully reveal its floral and mineral nuances.
A Savennières from Domaine Ogereau, Between Windblown Sands and Schist
The estate
Domaine Ogereau, based in Saint-Lambert-du-Lattay in the Val-du-Layon, in the Loire, is run today by Vincent Ogereau and his son Emmanuel, who joined the estate in 2014. Renowned across several generations for its work with Chenin Blanc, the estate has distinguished itself by reclaiming the great dry white terroirs of Anjou and through its commitment to organic farming.
The vineyard
La Saponaire 2024 comes from several plots within the Savennières appellation, located on the banks of the Loire, on slopes made up of schist and highly draining windblown sands. These terroirs include Clos le Grand Beaupréau, regarded as historic within the estate, as well as the more recent plots of Les Murailles and L'Aiglerie, located between Savennières and La Possonnière. The vines are farmed organically, with Guyot Poussard pruning and manual disbudding, shoot positioning and leaf removal.
Winemaking and ageing
The harvest for La Saponaire 2024 is carried out by hand, in successive passes through the vineyard, so as to select only the healthiest and ripest grapes. Pressing is done with whole bunches, followed by light settling and then alcoholic fermentation conducted with the indigenous yeasts naturally present on the grapes. Ageing takes place in a variety of vessels, combining underground sandstone-tiled tanks, barrels and amphorae, in keeping with the style established by the estate for this cuvée.
