The estate
Established in 1955 by the Grandmougin family, Domaine Saint-Jacques spans 9.5 hectares in the heart of the Burgundy wine region. This site steeped in history, once a resting place for pilgrims on the Way of Saint James, houses remarkable thirteenth-century Romanesque cellars. Today, Christophe-Andréa Grandmougin, representing the third generation, runs the estate with a firm commitment to preserving this unique terroir. The estate stands out for its dedication to sustainable and organic viticulture, combining respect for tradition with a modern environmental approach to produce wines of great precision.
The vineyard
Located in the Rully appellation, north of the Côte Chalonnaise, the vineyard sits on limestone-rich soils. The cuvée comes from the finest plots of the Marissou Premier Cru, benefiting from an ideal south and south-east exposure for sunlight. The vines, around forty years old, are planted at a high density of 10,000 vines per hectare. The estate favours mechanical soil maintenance and manual harvesting in small crates to preserve the integrity of the berries.
Winemaking and aging
The production of the Rully 1er Cru "Stellaris Campus" Red 2023 relies on traditional methods. Harvest dates and winemaking protocols are carefully tailored to the specific characteristics of the plot. The process focuses on gentle extraction of colour and tannins, in order to preserve the full aromatic delicacy of the fruit.
