Colour
Brilliant, it reveals a pale yellow hue that may be adorned with subtle golden or emerald reflections.

Nose
The aromatic bouquet opens with notes of white-fleshed fruits, such as peach and pear, mingled with hints of citrus and flowers. The whole is underscored by a chalky minerality as well as delicate buttery, vanilla and toasted nuances derived from the ageing process.

Palate
The attack is both fresh and round. This wine reveals a buttery, complex texture, supported by lovely vivacity. The palate offers a harmonious balance between citrus flavours, spice and toasted bread, extending into a remarkably long finish.

Food and wine pairing
This white wine pairs perfectly with poultry such as chicken or turkey, particularly when accompanied by a creamy sauce. It also enhances white fish in butter sauce, seafood such as scallops, as well as a variety of cheeses, whether fresh goat's cheese or pressed cheeses like Gruyère.

Service and storage
To fully enjoy this Rully Village 2023, it is recommended to serve it at a temperature of between 12 and 14°C. Approachable from 2025, it has a fine structure allowing it to evolve favourably in the cellar until around 2035.

The estate
Founded in 1955 by Christophe-Amédée Grandmougin, Domaine Saint-Jacques is a family-run estate located in the heart of Burgundy, France. Now led by the third generation in the person of Christophe-Andréa Grandmougin, the estate oversees a vineyard of approximately 9 to 10 hectares, the vast majority of which is classified as Premier Cru. Committed to an environmentally friendly approach with a conversion to organic farming initiated in 2018, the estate stands out for its dedication to artisanal methods and the authentic expression of its terroirs.

The vineyard
Located within the Rully appellation, the vines flourish on hillsides at altitudes ranging from 230 to 300 metres. With an average age of 50 years, they sink their roots into clay-limestone soils rich in Jurassic marl and limestone. The vineyard is tended mechanically, without the use of chemical products, in order to preserve biodiversity and soil health.

The vintage
The year 2023 stood out for its exceptional heat in Burgundy. Following a mild spring, summer proved to be particularly hot and dry, marked by a water deficit. However, cool nights helped preserve the acidity of the berries. These ideal weather conditions led to an early autumn harvest, yielding a generous crop and grapes of perfect ripeness and health.

Winemaking and ageing
The grapes destined for this Rully Village 2023 are hand-harvested and undergo rigorous sorting. Vinification includes malolactic fermentation and ageing on fine lees for a period of 8 to 14 months. Part of the wine is aged in stainless steel tanks, while the rest rests in oak barrels, 10 to 15% of which are new, in order to add complexity without masking the fruit.
