Tasting
Colour
The colour reveals an intense red hue, with deep purple hints and a lovely viscosity.
Nose
The nose offers a rich, fruity bouquet, dominated by aromas of ripe cherries. It then reveals a lovely complexity through notes of dried fruit, undergrowth and Mediterranean herbs, rounded out by spicy touches of cinnamon and nutmeg, along with subtle balsamic and toasted nuances.
Palate
The attack is full-bodied and warm, supported by a structure with particularly fine, silky tannins. The balance is remarkable, combining the generosity of the fruit with a lovely tangy freshness. The finish, showing great persistence, lingers on notes of dried herbs and cherry.
Food and wine pairing
This wine pairs perfectly with slow-braised meats, roasts or wood-fired grills. It also goes wonderfully with Mediterranean dishes based on tomatoes, spicy preparations, or full-flavoured aged cheeses.
Service and storage
Gianfranco Fino Salento 2022 shows superb aging potential and can be cellared to develop favourably until around 2035.

The intensity and richness of a red wine from Puglia
The estate
Founded in 2004 in Puglia, the Gianfranco Fino estate is the result of a successful career change. Originally an expert in agronomy and olive oil, Gianfranco Fino, alongside his wife Simona Natale, transformed a small 1.3-hectare vineyard into a genuine international benchmark. Today, the two owners run this 23-hectare estate with a philosophy rooted in instinct, passion and respect for tradition. The estate stands out for its rejection of official appellations, favouring complete creative freedom to express the authenticity of its terroir.
The vineyard
Located near Manduria in Salento, the vineyard thrives at an altitude of around a hundred metres, cooled by breezes from the Ionian Sea. The vines, some of them a century old, are trained using the traditional bush vine method. Their roots plunge into red soils made up of clay, limestone and sand. To ensure maximum concentration, all work is carried out exclusively by hand, and yields are deliberately limited to around 400 grams of grapes per vine.
The vintage
2022 benefited from particularly mild weather conditions. The growing season was marked by intense summer heat combined with very low rainfall, favouring excellent natural concentration of sugars within the berries.
Winemaking and aging
The grapes for Gianfranco Fino Salento 2022 are harvested by hand in late August, at a stage of slight overripeness. After refrigerated transport and rigorous sorting, the must macerates with the skins for two to three weeks. Aging then takes place for around nine months in French oak barrels, half of them new, with daily bâtonnage. The wine is finally bottled without any clarification or tartaric stabilisation.
